nice addition to okc fine dining scene. my husband and i dined at vast on a january saturday evening at 8:30 pm. he had made our reservations for this prime time in november, so with this long of a wait, i had very high expectations. for the most part, the restaurant was a hit.
the hostess greeted us warmly and offered to take my coat. we arrived more than 15 minutes early and were prepared to wait in the bar area for a while, but the hostess said that our table was ready. we were led to a table with a good nighttime view of the oklahoma city skyline and it made for quite the romantic ambiance. all of the waitstaff that passed our table during the meal were dressed in suits and ties. we were greeted by our waiter, offered our menus, and the meal and service that followed were good with a few small hiccups.
after ordering, we were served an amuse bouche of tuna tartare on small silver spoons. the tartare was fresh, well seasoned and delicious. we tried the maine lobster ravioli as an appetizer, which was served at exactly the same time as the red oak and butter lettuce salad. that was a shame, but both dishes were very good. the ravioli was served as a long ribbon of pasta filled with lobster, topped with a savory cream sauce and accompanied by large fried lobster claws and fresh dill. the salad was a large platter of fresh red oak and butter lettuces accompanied by fried tomatoes and a creamy sage vinaigrette. our waiter came by with a bread basket with three different types of bread: a lavosh and two small, soft rolls filled with a tomato tapenade and a creamy jalapeño filling. as an aperitif, my husband tried the b&b cocktail, a refreshing combination of roasted beets, gin, lime, agave, st. germain and absinthe.
for dinner, i ordered the lobster boursin diver scallops. this entree was absolutely top notch. it included three large diver scallops delicately stuffed with lobster, a passion fruit beurre blanc, braised fennel and a carrot cardamom purée. my husband tried the ancho chili coffee rubbed strip steak and for $41, it was a major disappointment. it was hard to believe that piece of steak came from the same kitchen as the other thoughtfully prepared dishes served to us throughout our meal. simply put, the cut of steak was tough and the coffee rub lacked flavor. it was entirely unremarkable, but the asparagus, maytag blue cheese sweet potatoes and glazed cippolini onion served alongside it were lovely. we did not, however, mention our disappointment to our waiter. next time, we plan to steer clear of any of the steak dishes on themenuas they seem to be the most unsuccessfully reviewed.
for dessert, we tried the "joconde," which was an artful combination of white and dark chocolate, raspberries, strawberry and caramel. throughout the meal, we enjoyed wines by the glass thoughtfully recommended by our waiter. overall, our experience at vast was pleasant minus the one big miss with the strip steak. the ambiance of the restaurant, the professionalism of the staff and the quality of the food and drink make this a welcome addition to the fine dining scene of oklahoma city.
