pumped up pub. the iconic pub. as far as i'm concerned, the quality of the pub dictates the quality of the city. downtown slc has a handful of good pubs, and my favorite has always been squatters. i have nothing bad to say about any of the pubs downtown, but the most consistent quality beer and food has been at squatters.
the food is just good. it's not the kind of food that i would scream to everyone that they have to try it, but it's definitely in the top quintile of food quality. i would never be worried bringing someone from out of town to this pub. the menu is broad, giving you options from classics like fish and chips or burgers, to clever pizzas, southwestern concoctions, and even a bit of asian fusion. over the years, i've tried a lot of them so feel safe saying that if you can't find a dish to eat here, then you just don't like food.
the trump card for squatters is their beer. we have severalgreatmicrobrewed beers in slc, and squatters is definitely on the short list. my personal favorite is their viennese. for me, it's the perfectly balanced between light and dark, bitter and sweet, that i just want to fill a bathtub with and drink. i wish i could, but it's such a popular one, that often it will be sold out. not to worry though, because you have plenty of other options. other rave-able beers: the capt bastard oatmeal stout (thick and meaty, but not bitter), chasing tail (lighter and sweeter) and full suspension (unfiltered hoppiness...not for the faint of heart).
