brisket check list -. is ingrained in every bbq snob and central texas resident. numerous restaurants and prolific publications, not to mention back yard smoking experts, have made us all bbq geniuses.
i visited this eatery (again) last week. here is the results-
1. perfect smoke ring with beautiful color - check
2. crisp, dark flavor-able bark - check
3. moist (not dry) tender meat with a nice hint of smoke - check
beans, pickles & onions are included, all you can eat. loaves of sliced bread are randomly placed for convenience. no service, other than the meat and register people.
if you are paying $12.95 lb for bbq brisket, it better be good. this is good. in the past, i thought this eatery was expensive. a visit to blanco bbq last week solved that little concern.
cooper's, here or elsewhere, is one of the holy grail of bbq joints. try it and you will know why!
