ehhhh. i have lived in jersey all my life. my dad worked in hoboken and used to bring me home goodies from carlos. ever since they got there show, the quality of there regular baked goods had gone beyond down hill. everything is now over priced and looks like it was made in a rush. we got canolli's and i swear the filling was spoiled, i had to spit it out. sorry buddy, but you have lost a loyal customer of 15 years. nj has many better bakery's than this.

average at best. all his attention must be on taping tv shows because the cakes and pastries are average at best and very pricey. plenty of other truly great italian bakeries in the area to waste your time and money at this place. disappointed to say the least.

being in hoboken for many years the place went down hill in quality, i order a cream puff cake and it was so disappointing how they slopped it together, buddy's dad never would have sold something like that plus it was over priced marie should get back in the store and show her kid how to run a business , once the show is done it will be hard to get there loyal customers back!!!!

ok... let me start by saying tht i do not hate carlo's, but i will say that my trips there have been underwhelming at best... the pastries are good, but nothing special... quite frankly, the cakes, pastries and other confections are, at best, pedestrian... and, since the prices are so inflated due to the popularity of the tv show, you can go to any little italian bakery and receive a better product at a better price... que sera sera

jump off of a bridge before coming here. understaffed without anyone to be concerned that there is an unorganized crowd of people waiting to get average pastries...don't waste your time. these desserts are not worth anyone's time

had the opportunity to attend a workshop with cecilia where i learned the basics of fondants and how to use them to decorate a cake. had the chance to try their famous cannolis and meet their founder, buddy valastro. it was such an amazing and memorable experience. if you ever wanted to know how a cake or a cannoli really tastes like..don’t think twice... try them at carlo’s bake shop.

how could i possibly be near hoboken and not visit this famous bakery?
i expected the confusion that we see on tv, but i was wrong. yes, there was a line outside and inside the store, but no confusion at all. in fact, the line inside was well organized and on the outside people waiting slightly apart from the store so other people could take a photo or something.
when i entered, i realized that the store was smaller than it looks on tv and, unfortunately, no one of the valastro family was there. if you are a fan of cake boss, like me, you can fell a little bit disappointed, but i think, you should go there anyway.
there was a display with so many well-decorated cakes and all of them seemed delicious, it was very difficult to choose, but i decided to order three: a cannoli, one of the specialities, a 'lobster tail' filled with salted caramel and a chocolate cake with a chocolate mousse filling.
i'm gonna be honest.. i was very disappointed with the cannoli, i didn't like it at all, but the other two cakes were great, so in the end, it was worth the visit.

the canoli and lobster tails were delicious, and of course going to the original bakery was amazing too! however, me and my family tried the pumpkin pie. the pastry was pale and undercooked, the mixture wasn't sweet at all and resembled the texture of a face mask. i don't think the pie turned out how it should have.

not sure what all the hype is about... very standard tasting pastries! just because buddy has a show on tv does not mean that his bakery is the best in hoboken, let alone jersey. tried a variety of pastries and they all tasted comparable to a grocery store's bakery section. i don't recommend!
