over rated. with so many amazing bakers/bakeries in nj, this one surely disappoints. i went there long before "cake boss" was the draw. bakery items are mediocre at best.

loved it. got a cake, canollis, crumb cake that was the coffee crumb cake, cupcakes, a little bit of everything. my favorite was by far the cake and the crumb cake, having a slice with your coffee....speechless. yummm

i have been fortunate enough to try a cake from a friend that was made by carlo's bakery. it was mediocre. the fondant was good (since i love sugar) but it also tasted like "bubble gum that you swallow." also, recently, i found out that the fondant is not fresh and factory made. i found this out on next great baker. the filling was probably the best part. the sponge (or the cake) was okay. it is impossible to make all of carlo's bakery's cakes fresh because they are mass-produced. if they were fresh, this review would be more positive than negative. overall, its a cake, and i like cake. if you are looking for a fantastic cake that you don't have to stand on line for and hour(s) for, go to sorrento bakery in east hanover, nj. this is definetly the best bakery, perhaps, in all of new jersey.

i love it. since mi familia and i started watching carlos bakery i love this program, i wish one day i could go there to taste those delicious cakes and to meet buddy and his familia. buddy i hope that you and your wife stay together forever, you two make a great couple together with your beautiful kids. i love you all from the bottom of my heart, god bless you all.

pleasant visit. we visited on a thursday morning, got there right before it opened at 7am and there was no wait whatsoever. staff was friendly, not overly so but pleasant so no complaints on service at all. i thought the prices were a little steep compared to what i was used to, though probably in line with comparable nyc bakeries, and being somewhat of a tourist attraction probably adds a little to the price as well.. we got cupcakes, cannoli, and lobster tails, all were excellent. the cannoli filling was a little sweeter than traditional cannoli, but i like it that way so i enjoyed it. they fill the cannoli when you order them, so the shells were crisp and delicious. cupcakes were about as expected, moist and tasty but still just cupcakes. never had lobster tails before, so we didn't have anything to compare them to, but they were quite good, flakey crust and rich filling. all in all we enjoyed our visit, the novelty of being in the famous bakery of the "cake boss" was worth paying a little bit of a premium. get there early and you won't be rushed. i would not hesitate to recommend this experience.

i wanted to like it. this is a tourist trap. the bakery is mediocre at best. if you are in search of italian baked good there are many more offering higher quality at lower prices.

this is an average bakery with a long line. this is an average new jersey italian bakery. you would be crazy to stand on line. rispoli's in ridgefield absolutely blows this away. popular tv show doesn't mean good food.

hoboken new jersey is a great city for good food. the italian community has deep roots in this city, and of course, great italian food is here for the taking!

carlo's bakery is very famous. i had to wait two and a half hours just to get in and it was hot. however it was worth the wait. the pastries were delicious especially the cupcakes and lobster tails which were amazing! it was reasonably priced considering how famous it is and the service was great. yes it could use help at the storefront since it was very crowded and clausterphobic but it was well worth the wait and trip up from the jersey shore.

good, but not the best.. went on christmas, probably not the best decision as we waited 1.5 hours in line. the thing with carlos bakery i's that the reputation it builds from it's tv show makes it hard to impress customers high expectations. this was reflected in the chocolate and cream cake and the custard horn which was good, but didn't meet expectations. however the white chocolate coated strawberrys were delicious, juicy and definately a highlight.

it is not my favorite. i went there with my bff crazy italian food monkey and 22 other people it was awful we could not park or get on line i have been there before and it was too pricy too sweet and it stunk buddy is nit a boss and should learn how to make his customers happy and make them not have to writenegitave comments about his bakery and how rude the people were. to all the people who are planning or going there don't it's not worth the wait to get inside and see how rude they r. buddy guess you arent such a boss huh

love the show, love the family, love the place, hate the food!. i first visited carlo's 2 years ago and fell in love... delicious pastries, no lines, tables inside to sit at, and very reasonable prices. however, i returned to visit last month, and was absolutely horrified... even though the line down the sidewalk was an hour, and then the wait inside the store was another hour, i would have been able to deal with that if it weren't for the fact that most of the food was disgusting, some was tolerable, and only one item was good. we spent $86 on cream puffs, napoleans, cannolis, a chocolate mousse pastry, cupcakes, a crumb cake, and a cannoli cake. the pastry cream inside the cream puff was hard and rubbery and tasted like fish... completely inedible and went right in the garbage, the cannolis were tolerable, but really had no flavor whatsoever, the napoleans lacked flavor also but faintly tasted like lemon (a traditional napolean should be vanilla), the cupcakes were average, the crumb cake was very dry, the cannoli cake ($26!!) was flavorless. the only thing that really was good was a very small chocolate mousse pastry. everything else ended up in the garbage. conclusion: overpriced, underflavored, and not worth the wait. what a shame... they used to be awesome! maybe they got too big for their britches! just to add some credibility to this review... i'm a baker living in florida and my family in france were bakery owners for decades... so i think its fair to say i know a thing or two about what good pastry should be like.

loved it. we took a trip here and were very pleased with the bakery items, service, etc. we also own a bakery and can appreciate the quality here. they are every bi as good as advertised. and no kidding! they have long lines. we got their about a half-hour before they opened and got right in. plan ahead!

i've noticed this thing about urbanspoon. when places are popular, urbanspoon allows small time competitors and trolls to post under aliases slamming the business. i and other successful bakeries in my community are constantly catching our competitors posting this way. the restaurants, etc. that are listed as the most popular are often unheard of or not really thought to be that great. go figure.
