pretty good, but mostly a tourist thing.. i wanted to go there mostly bc me and my son like the show a lot. around 1 pm the line was insane! when we came back at 3:30pm we were able to get in right away. it was a fun experience. we waited about 30 mins to be served, so not too bad. honestly the cupcakes and cookies looked so-so. i went for the hazelnut cream puff, lobster tail and the famous crumb cake i had been dying to try. i've had better lobster tail at the whole foods bakery counter, and the crumb cake was good but not great. but wow, the hazelnut cream puff was really good, and only $2. i bet their cream puff cake would be amazing. (ordering online now.) the prices were pretty good. if you're in hoboken and you like watching cake boss, and the line isn't ridiculously long make sure to stop by, otherwise maybe skip it.

we drove down 12 hours away to check buddy's place out. nice presentation but pricey. we wanted to try something that everyone liked and we heard his crumb cake is famous. we were disappointed :( the crumb was ok but the cake seemed old not hard but getting that way. did not taste fresh. sorry i had to give a thumbs down. it was not worth the $11.00

below avg . bakery. stop n shop bakery is ten times better. buddy's sister walks around the bakery likes she on the red carpet.dont waste your time because i did!

vanilla cupcake with chocolate icing. we were amazed at the short line up on a saturday morning over the christmas holidays, we only waited about 10 minutes to get in. once inside it is very overwhelming with people trying to see items at the counter and order items. it gets crazier when one of the main individuals from the show comes down for a cameo. we ordered four cupcakes, a fruit tart, tiramisu and cannoli. my husband said the fruit tart was the best of the items he ordered. of the cupcakes the vanilla with chocolate was the best by far. it was great for a tourist stop.

i have not been here yet but visited the website and found it very hard to navigate i could not find any prices and it was very limited on menu items they have.

go there if you like the show...otherwise, not really.. i made a trip to nyc to see some friends. i absolutely wanted to go all the way to hoboken for carlo's bakery. the quality was ok. lobster tail was my favorite and the regular cannoli where quite good. crumb cake was very ordinary. the pine nut tartelette was good. the cupcakes and cookies were ok. i did go there fresh off a night bus so the line was small. aside from the show, the food is quite regular and pricey, so i wouldn't go there if i didn't like the show. but if you do go, get a lobster tail.

went on a weekday in the late afternoon/early evening and were third or fourth in line...a surprise given how many reviews suggest very long wait-times. we purchased a brownie, 1/2 lb. of cookies, some cutout cookies, and a cupcake...totaling just over $20...consistent with what we expected in the area. the bakery items were nothing spectacular...it's mostly about visiting a place you've seen on tv. if you hope to be blown away by the best sweets you've ever had, you might be disappointed. the staff seemed fairly efficient. we were surprised by the clerk giving our 19-month old daughter a free cookie out of the display case...nice gesture, and something we certainly didn't expect out of a touristy spot in north jersey.

who does not know the cake boss, buddy valastro? his show on tv is very popular and there is always a very long line in front of his bakery in hoboken, new jersey. but know that if you live in hoboken, you can skip the line: just show an id that proves you are living there. my first experience with carlo's bakery was so so: couple of years ago, i bought a cannoli and did not like it. i thought at that time that it might have been because i did not eat it right away and put it in the refrigerator for few hours. then, one of my colleagues brought a tiramisu and a chocolate cake at work: i loved the tiramisu but the chocolate cake was way too sweet. so we decided to try again. the cake boss is known for his insane cakes that he is building on his show. for sure they look spectacular, but i am not sure they taste that good considering the amount of fondant and rice crispy treat he puts in it.  when we were there, it was packed! the problem is that we could not go around and look at the cak

most wonderful experience. "a "plus ++++++ ! my family and i went to ny for a family vacation. we love the cake boss show and we also own an italian restaurant where we live in californian....my daughters and i made a wish list of places and things we wanted to do in ny. top 5 on all of our list was to visit hoboken and eat at carlo's bakery. we took the path and waited 2 hours in the hot august sun. when it was finally our turn, we were greeted by the most enthusiastic and patient young man, which soon learned his name was , alex johnson. he was so kind, as he explained each dessert so exquisitely ! we were so impressed and all of us agreed we would be so amazingly lucky if our employees were so caring. not to mention i spent $200.00. what a lovely place! we were also fortunate enough to see the boss himself and his beautiful wife! thank you! i understand filming is underway! we learned from alex his dream is to be an actor! i will testify to the fact he would be an asset on your show! i own 2 businesses! so proud of you all! as a business owner and in this failing economy - you are kicking butt! you have inspired me to do more! thank you

there are so many bakery's in new york as well as new jersey that you can pass this place right up!!! a bunch of stupid mindless fat tv slobs waiting to see some stupid shop that was in tv! you are in hoboken!!!!! there are a million amazing italian bakery's in the area! if u want quality do your homework and go elsewhere. this place may have been a gem before the tv show but now it is an atrocity not to mention an eye sore for the city, with lines 2-4 hours long.

what a waste. i have seen tourist traps before and this one is on the top list of lame places to go if you are in the new york area. save your time and money.

very nice place. the service was great, but i thought the pastries would have been much better considering the price. i would still go back since it has become a north jersey landmark.

carlos is bad. people listen! this is horrible! it is a scam! the food is awful! on the show it looks amazing and it is a lie! the cake is bad and tastes like factory made crap and the other food was subpar at best! i was so disappointed and was so angry! heart broken really! i was expecting so much and got this.....my friend mormms was so mad because he is the biggest fan and hated it!
if you want to call your self a good bakery you should consider not making it taste like cake mixture from a supermarket......

dont go! it will be a 2 hour long wait to get in to the packed bakery that doesn't even have the bakery smell! it tastes bad too!

never saw so many whiners in one place. some people go out of their way to verbally trash a place because they had to stand in line for "hours" and didn't have a good experience. grow up! i went to carlos bakery on june 29, 2012 and waited in line just like everyone else and if you are expecting to experience something unrealistic just because the carlos bakery is on tv, then don't bother. we ordered lobster tails, cannolis, and red velvet cupcakes....all were delicious. frankly, i came down to carlos bakery for my kids who love the show and love buddy. would i go again? yes. i enjoyed the experience.

i don't get it. just your everyday, semi mass produced bakery fare. the only exception being the most hideous looking cakes available anywhere. why this bakery gets a foodnetwork show is beyond me. there is an abundance talented, gifted artists in the ny metropolitan area that create truly magnificent confections.

why so much applause for mediocrity?
