we were fortunate enough to be around the area at some stupid early time like 7:30 on a sunday morning so we decided to check what all the "cake boss" hype is about..

glad we went early, a few minutes after we arrived a massive tour bus parked up and dozens of tourists flooded the place, that's when the post office style ticketing system kicked in...

we had a carrot cake cup cake, a white chocolate mousse thing, & a cappuccino.. the carrot cake was unfortunate.. defiantly not like a boss, not even a janitor... white choc mousse was very good, as one would expect, & cappuccino wasgoodtoo, albeit a little under filled

the shop is very nicely kept, not too many seats though.. you do feel a buzz in the atmosphere both from staff & excited tourists (some like silly star struck teenagers).. the designs are just fabulous, but at the end of the day i was there to eat cake and left underwhelmed.. unless you happen to be around stupid early, it's just not worth the queue..

pretty good, but mostly a tourist thing.. i wanted to go there mostly bc me and my son like the show a lot. around 1 pm the line was insane! when we came back at 3:30pm we were able to get in right away. it was a fun experience. we waited about 30 mins to be served, so not too bad. honestly the cupcakes and cookies looked so-so. i went for the hazelnut cream puff, lobster tail and the famous crumb cake i had been dying to try. i've had better lobster tail at the whole foods bakery counter, and the crumb cake wasgoodbut not great. but wow, the hazelnut cream puff was really good, and only $2. i bet their cream puff cake would be amazing. (ordering online now.) the prices were pretty good. if you're in hoboken and you like watching cake boss, and the line isn't ridiculously long make sure to stop by, otherwise maybe skip it.

who does not know the cake boss, buddy valastro? his show on tv is very popular and there is always a very long line in front of his bakery in hoboken, new jersey. but know that if you live in hoboken, you can skip the line: just show an id that proves you are living there. my first experience with carlo's bakery was so so: couple of years ago, i bought a cannoli and did not like it. i thought at that time that it might have been because i did not eat it right away and put it in the refrigerator for few hours. then, one of my colleagues brought a tiramisu and a chocolate cake at work: i loved the tiramisu but the chocolate cake was way too sweet. so we decided to try again. the cake boss is known for his insane cakes that he is building on his show. for sure they look spectacular, but i am not sure they taste thatgoodconsidering the amount of fondant and rice crispy treat he puts in it.  when we were there, it was packed! the problem is that we could not go around and look at the cak

carlos is bad. people listen! this is horrible! it is a scam! the food is awful! on the show it looks amazing and it is a lie! the cake is bad and tastes like factory made crap and the other food was subpar at best! i was so disappointed and was so angry! heart broken really! i was expecting so much and got this.....my friend mormms was so mad because he is the biggest fan and hated it!
if you want to call your self agoodbakery you should consider not making it taste like cake mixture from a supermarket......

dont go! it will be a 2 hour long wait to get in to the packed bakery that doesn't even have the bakery smell! it tastes bad too!

never saw so many whiners in one place. some people go out of their way to verbally trash a place because they had to stand in line for "hours" and didn't have agoodexperience. grow up! i went to carlos bakery on june 29, 2012 and waited in line just like everyone else and if you are expecting to experience something unrealistic just because the carlos bakery is on tv, then don't bother. we ordered lobster tails, cannolis, and red velvet cupcakes....all were delicious. frankly, i came down to carlos bakery for my kids who love the show and love buddy. would i go again? yes. i enjoyed the experience.

i have been fortunate enough to try a cake from a friend that was made by carlo's bakery. it was mediocre. the fondant wasgood(since i love sugar) but it also tasted like "bubble gum that you swallow." also, recently, i found out that the fondant is not fresh and factory made. i found this out on next great baker. the filling was probably the best part. the sponge (or the cake) was okay. it is impossible to make all of carlo's bakery's cakes fresh because they are mass-produced. if they were fresh, this review would be more positive than negative. overall, its a cake, and i like cake. if you are looking for a fantastic cake that you don't have to stand on line for and hour(s) for, go to sorrento bakery in east hanover, nj. this is definetly the best bakery, perhaps, in all of new jersey.

i wanted to like it. this is a tourist trap. the bakery is mediocre at best. if you are in search of italian bakedgoodthere are many more offering higher quality at lower prices.

this is an average bakery with a long line. this is an average new jersey italian bakery. you would be crazy to stand on line. rispoli's in ridgefield absolutely blows this away. popular tv show doesn't meangoodfood.

hoboken new jersey is a great city forgoodfood. the italian community has deep roots in this city, and of course, great italian food is here for the taking!

love the show, love the family, love the place, hate the food!. i first visited carlo's 2 years ago and fell in love... delicious pastries, no lines, tables inside to sit at, and very reasonable prices. however, i returned to visit last month, and was absolutely horrified... even though the line down the sidewalk was an hour, and then the wait inside the store was another hour, i would have been able to deal with that if it weren't for the fact that most of the food was disgusting, some was tolerable, and only one item was good. we spent $86 on cream puffs, napoleans, cannolis, a chocolate mousse pastry, cupcakes, a crumb cake, and a cannoli cake. the pastry cream inside the cream puff was hard and rubbery and tasted like fish... completely inedible and went right in the garbage, the cannolis were tolerable, but really had no flavor whatsoever, the napoleans lacked flavor also but faintly tasted like lemon (a traditional napolean should be vanilla), the cupcakes were average, the crumb cake was very dry, the cannoli cake ($26!!) was flavorless. the only thing that really wasgoodwas a very small chocolate mousse pastry. everything else ended up in the garbage. conclusion: overpriced, underflavored, and not worth the wait. what a shame... they used to be awesome! maybe they got too big for their britches! just to add some credibility to this review... i'm a baker living in florida and my family in france were bakery owners for decades... so i think its fair to say i know a thing or two about whatgoodpastry should be like.

loved it. we took a trip here and were very pleased with the bakery items, service, etc. we also own a bakery and can appreciate the quality here. they are every bi asgoodas advertised. and no kidding! they have long lines. we got their about a half-hour before they opened and got right in. plan ahead!

i've noticed this thing about urbanspoon. when places are popular, urbanspoon allows small time competitors and trolls to post under aliases slamming the business. i and other successful bakeries in my community are constantly catching our competitors posting this way. the restaurants, etc. that are listed as the most popular are often unheard of or not really thought to be that great. go figure.

horrible customer service. i have never had a pastry from carlo's, and because of their horrible customer service, i probably never will. i called asking about possibly getting pastries even though i live in the south, i understand they don't ship pastries, but i was hoping they might have some kind of ideas, so i said "hello, i am from atlanta and i was hoping to buy some pastries" and she said "we don't ship" and hung up! i understand they are busy, but i also have family in new jersey, and if she had let me finish speaking, she would have heard me actually ask my question, which was "could i order a box of pastries and have my family pick it up, and if so, do you know of the best way to ship them back?" but instead, she didn't even let me speak and hung up the phone. sorry, but i think i will go to a different italian bakery in boston with great pastries andgoodcustomer service. they are incredibly rude at carlos bakery.

all aroundgoodtime. we went to the bakery to sample some of their famous goods last weekend. i bought a small fondant cake, cannolis, chocolate covered strawberries, and some assorted pastries. everything was delicious. the cake was worth every penny!!!!

i see a lot of people reporting poor customer service...the staff was very helpful and attentive. the bakery was very busy and they were doing the best they could to keep the crowds under control.
