best sushi in sydney. definitely go here on a weekend and book a spot at the sushi bar. it's really part of the overall experience. this is definitely a high-end sushi restaurant but every penny is worth it here. the food here is exquisite and the sushi chefs are friendly and willing to accommodate special rolls that are not on the menu. my fiance gets the tuna sashimi everytime and is never disappointed. the miso eggplant and the citrus salad is also very good, as i'm sure pretty much everything is! excellent wine and martini menu. we have dinner here and feel as though we've actually had a "night out" and not just a meal... my only complaint (as with most sushi restaurants in sydney), would be that there aren't a lot of vegetarian rolls on the menu. i would expect there to be at least one vegetarian roll with "exotic" ingredients such as mango or truffles or tofu... other than that, it's a great spot and i'm sure we'll be back many times!

i went here for dinner for a special occasion and everything we ordered was perfect!

we ordered:
- oysters with lemon juice
-kingfish
-tempura bug lettuce cup (almost favourite)
-lightly seared scampi
-crab soba noodles (favourite dish)
-miso glazed tooth fish
-dynamite roll (spicy tuna)
-soft shell crab roll

service was also friendly and prompt. they also provide you with warm hand towels to clean your hands before and after which is a nice touch.
would recommend checking out this place!

came here for dinner on a friday night and the place was packed, thank god we made reservations beforehand. love the atmosphere and the table setting where everyone sits around the sushi bar where we could watch the chefs prepare the sushi and sashimi.

we ordered the agedashi tofu, mixed tempura, wagyu skewers, atlantic sushi (salmon sushi) and bay bug tempura sushi. my favorite was the wagyu skewer because the wagyu was very tender and juicy and sort of melts in your mouth, the wagyu was also seasoned beautifully. the sushi were really great too, but the atlantic sushi lacked some flavor, perhaps you could add some sauce in it. the agedashi tofu was nice too, the broth was yummy. the mixed tempura was nice and crispy.

will definitely be back!

disappointing!. had dinner here early tonight, as i used to love everything i had here. but tonight somehow, seems they might have changed chefs and some food i ordered looked and tasted different than the ones i had before including a few pieces of sushi. i thought sushi are supposed to use raw fish or at least most of them are, but the ones came to my table were seared, so i checked with the waitress whom was looking after my table and was told "it has to be seared" by both the waitress and the chef. i was confused and decided to check the menu again, but menu doesn't say the items i ordered are seared. instead there's a remark at the bottle indicating it's customers choice to have the sushi to be slightly seared.
apparently that was not my choice but the chef's choice! i told the waitress i'd like to talk to the chef, because i don't want to eat and pay something i don't like. the chef, he's japanese came to our table and explained with a bit attitude that most of the customers in this restaurant like seared sushi.
excuse me?? but i don't! if you've made a mistake, you just admit it. marivale, this is so disappointing! unprofessional waitress and rude chef, where's your customer service.
needless to say, i will not come again.

i settle at the sushi bar for a lovely dinner. i love this place and have traditionally dined at hemmesphere (the cocktail lounge which is connected to the restaurant), however today i have decided to dine at the sushi bar instead. it is a great way to see the food being prepared and a much more social setting being surrounded by fellow diners and interacting with the staff.

had lunch here. the hiramasa kingfish was devine. chicken karaage with the black vinegar was fabulous. unagi nigiri was awesome. had heiwa yuzushu to accompany the food, and it was an excellent match. finishing off with king crab soba noodle. it tastes great but to me, it was more like a fusion dish, not quite japanese cuisine.
the waitress is knowledgeable, and friendly.
overall, it was a great experience.

love love loved the omakase!! chef wai was super friendly and always downloaded for a conversation but the only downside was that there’s a cabinet blocking the diner from seeing the chef create his dishes, which is an aspect that i really appreciate in an omakase. while this omakase isn’t your typical traditional one, but it definitely delivers a well rounded fusion omakase with quality ingredients. thank you wai, michael and dan for curating the delicious and unique omakase.

wow!! my second visit here and all i can say is wow because everytime i visit, the quality is outstanding and so are the dishes. the highlight of my meal were definitely the tuna carpaccio and wagyu roll - the tuna was perfectly flavoured with a hint of spice and umami with the crispy onions. the tuna was so thin and absorbed the sauce really well.

the wagyu roll was quite tender and the perfect bite size, a sweet soy flavour and melted in your mouth. the roll wasn’t too heavy with the rice and i would say the amount we ordered was enough for 2 people but we did have a tiny bit amount left over (we could have done without the karaage and the portion would have been good).

the service and atmosphere was exceptional and they are quite attentive, even the sushi chefs when we had any requests! i would love to visit again and i know it’ll only get better.

was recommended to come here to try omakase and it was an experience. was abit hard to find because it was in the establishment and up the lift. the dining area quite compact. kitchen in the middle with 3 chefs.

the dishes came out quite fast which was good. the sushi was nice but was abit too much. 8 different sushis was abit much. then after it was the wagyu chuck with rice as a main. tasty but abit over cooked wagyu made it abit dry. rice was very tasty though. but by then i was completely full from all that sushi. so had to take most of it away.

service was excellent. no complaints there.
overall, nice place to kick back and enjoy quality japanese food.

i am visiting sydney and a very lovely friend of mine recommended this place and oh boy i had a great lunch. 
i was the first person in, as i booked at opening time, mind i was wearing shorts and a crew cut black sweatshirt even if they stated in the email the dress code was smart casual, i would have not been surprised if i would have been sent away at the door, but it did not happen. i sat at the large bar, stunning interior, nice long marble sushi bar and some other tables for larger groups. casey (hopefully i am spelling her name right) was absolutely delightful and knowledgeable.
 after presenting the specials she gave a couple of suggestions on what to order. unfortunately they serve san pellegrino as sparkling water, which is the death of sushi and delicate flavours with the chalky consistency so i did have panna as a still water option. 

i had the edamame ( classic) they were perfectly cooked and i liked the they came still attached to the small branches, it looked great. after that, some sydney rock oysters with two different toppings: the shiso granita, surprisingly delicious even if a bit sweet and the ponzu, perfectly balanced ( i usually ask ponzu on the side as it can be unbalance and therefore very harsh on oysters). the wagyu uramaki was juicy and tender, the short rib inside was perfectly cooked. tuna dynamite temaki was delicious and spicy , i loved the nori they used, it is of a great quality indeed. the absolute highlight was my main dish, the king crag soba noodles, very generous portion and incredible umami. this dish is the reason i would go back to this place. perfectly balanced flavours tender noodles and mouthwatering crab meat. fantastic!!! i had a gorgeous ssb from western australia, their premium wine selection is outstanding, wish i had more time in sydney because i would go back and try more! 
oh and thanks for the dessert you sent to my table, was just the cherry on top!! ( or the pannacotta strawberry in this case, ah!)

i just had a dinner and a great night here.
nice environment on the top of the establishment.
waitress was so polite helping us with our choices, easy to talk to and with a good memory. food was cooked in front of us, which helped as well to understand exactly what we could have eaten.
we spent 2 hours eating great food. the dessert suggested by our waitress was amazing!
it is expensive but totally worth it.
