consistency is the issue. eddie deen has a winner here, and please don't judge this by the former sets of owners. deen makes consistently average, serviceable barbecue in dallas focused on catering, here the issue is inconsistentlygreatbarbecue.
when it's good it ranks with the best. silken brisket sliced thin, with requisite smoke ring and cookie, tender and redolent of smoke. ribs are very good for texas, heavy on the bone and slightly glazed.
sides are all kick ass, including the killer grilled bread and custom buns. beans are laden with sausage and cooked down, slaw is near perfect. i like a finer shred but a lot of folks like this style.
the issue here is consistency. sometimes great, sometimes average. i dig it.
