true discovery. i've eaten here a few times & nick & sams is one place that has to be experienced to understand. it is a true dallas steakhouse. we try to go a little ahead of our reservation, so we can sit at the bar for a while and people watch and start studying the wine list. people dress for dinner here usually, and i really like that. it is a custom that is slowly dying, and i think thats a shame. once seated, i start with the foie gras, which is bolder in flavor than most places. the only foie gras i've had that i enjoyed more is in new orleans (at besh's) . my wife loves the crab-cakes. i then order the long bone cowboy rib eye. honestly - cooked to perfection. i could almost cut it with my fork and the seasoning is dynamic and bold, which makes you want to eat every bite. my wifes ahi tuna wasamazingwith a wasabi crust. but the thing that has endeared me most to nick & sams is the wine list & the sommelier. n & s loves & understands wine, and this alone is worth coming here. thier wine list has over 400 offerings. the have over 30 by-the-glass offerings each night!! it is here that the sommelier introduced me to my absolute favorite wine - zd cabernet sauvignon. an amazing, amazing, amazingwine. they have an event called the ultimate experience (which i have yet to try) but it is an in-house experience centered around their wines. who does that? fabulous. the atmosphere is always elegant and warm, making this a very comfortable and easy place to go. the service is some of the best in the city, with the waiters knowing the menus and taking the time to understand your tastes. parking is valet. whenever i go, i go with the adventurers sense of discovery, and that makes it a fun night every time.
