the veganmenuwas a huge disappointment. there was no love in any of the dishes and it was as if they just put together a last minute veganmenujust for the sake of having options. the food was unbelievably below average, and at the price point it was at, it's just plain ridiculous. the risotto was hardly edible and although i hardly leave food behind, this had to be one of the few times i did. the only thing that saved the meal from being a complete disaster was the chocolate tart. it was also very quiet for a friday night, i think i saw about 3 occupied tables but to be fair we did get there at 6pm.

since it is considered fine dining, i'm guessing quite a few people would go here for a special occasion, but i don't think it would be the best option. unless themenuchanges, i will not be back.

this is a really great place, located in the first level of hilton hotel, with the excellentmenuand fantastic decoration -- it is really an amazing experience sitting beside a huge wine storage wall with gentle music and friendly services.

talking about the food itself. i cannot clearly remember what i have ordered, but definitely, i ordered a bowl of olive and i basically finished it all, since my friend cannot even have one piece of olive. olive goes will with white wine i suppose. 

the latest time i was there is in the new year eve, and they modified their menu. $150 per person exclude alcohol.  
lamb might be the really good choice for anyone likes lamb, you will not get disappointed.  
barramundi is not bad, but i suppose flying fishes has the best barramundi! lol.
omelet is okay, as normal. but the best one it might be offered at the grands of alexander, the crab omelet is excellent at the grands.

an excellent restaurant at hilton sydney that serves high quality breakfast buffet. i absolutely love their western and asian choices including dumpling, fried rice and various sausages to choose from. big thumbs up! will definitely come back to try their degustationmenu$145pp next trip down to sydney.

glass brasserie, in the hilton sydney, is out of my world. the venue is next level stunning and i felt like i needed to be in a tailored suit to at least try to compliment the opulence. i cannot fully judge luke mangan's food, or themenuas a whole, as i was only in attendance to review the chocolate degustation menu. amenuyou need in your life. not too sweet, not too bland, a perfect balance of chocolate joy for your senses. i cannot wait to return to this place to eat the rest of the food.

located in the sydney hilton hotel, glass has imposing presence with its vast windows overlooking the queen victoria building, it’s wall of wine and massive open kitchen. a creation of chef luke mangan, themenuis modern australian with an asian twist that works well. lunch at glass is truly a special event. the service provide by knowledgeable staff, is excellent. the decor is opulent yet relaxing.

the food was good but fell below expectations considering the price. ordered wagyu steak which was on the specialsmenu($75), and a lamb dish ($51). both meats were cooked well but i would say my favourite parts of both dishes were the purees, crumbles etc on the side. the sommelier did a fantastic job at recommending red wines to match the dishes. did not expect to still be peckish after bread and mains but servings were not as large as we expected so ordered dark chocolate cream, mousse, sponge dessert. my partner liked it but once again i was underwhelmed especially given the price. service was good.

we had buffett brekky here twice during our stay in sydney at the hilton. we were pleasantly surprised by the freshness of all food on the menu, the service was exceptional and choices broad.. it was great to see such a lot of themenumade in house and on site. i've had a few buffett breakfasts whilst staying at various hotels and couldn't say any of them are up to this standard!! thank you very much for this experience!! cheers

what an great experience. this place hosts a wonderful view, extraordinary cocktails and food and incredible service. the waiter was available to us at any moment and helped us through the winemenuto pick the perfect wine. we were celebrating an anniversary and the waiter bought out a dessert for free with writing on the plate. highly recommend this place.

during my visit to sydney for the f&b masters, i had the privilege of dining at the glass brasserie at hilton sydney. the glass brasserie is a definitive fine dining venue, which exudes elegance and sophistication.  celebrity restauranteur luke mangan and his team have created a menu and experience that has imprinted in my memory to remember for a long while.

glass brasserie was the venue i selected for my parents' wedding anniversary lunch celebration.

what works:
location very central, right across from qvb on george street sydney. restaurant set upstairs from the hilton sydney foyer. airy, lofty, extremely high ceilings for formal dining with zones of group and 1-1 tables set up all over the restaurant - which i liked. quality of food, especially the poultry and meats, served in the day were of really high standard. for entree we had slowed cooked prawns in lime and garlic style sauce which was smokey and tasty, and quail plus mushroom and red wine jus which so tenderly cooked and full of flavour it was yum! for mains we had aged grain fed picks of steak and lamb cuts from the meat board, and all were cooked to perfection. you could taste the difference in the meat in relation to where it was sourced from. a huge plus. for dessert we had a small dessert platter share plate. the dessert platters was quite ordinary in comparison to what is available elsewhere. coffee was ordinary. what was a nice gesture was the waitress had written a "happy anniversary" message on the side of the platter in dark chocolate sauce.

what doesn't work:
pricey. on the whole service is very average for a place like this. we were greeted by two ppl at reception desk who were quite pompous. we were led to our table by another waiter who sought to explain themenuoptions but not very clearly. there was amenuinconsistency issue we had to resolve for them. we were given three versions of the lunchmenuwhich caused great confusion on our table. i would have expected the staff to proactively take on customer feedback and exercise initiative to cut through the confusion, rather than talk at us three times over like we should have understood in the first place.

the verdict:
weighing out my overall experience i think glass brasserie rates a little above average.

breakfast at glass brasserie after staying in hilton. selection and service is amazing and probably the best hotel breakfast by a long shot. you can order frommenuor go for buffet. either are great.. delicious breads and fresh juices..

glass is worth a visit for the chance to admire the space and the view across to qvb alone. the bar area offer this the best and the mighty wine racks that extend 2 floors up are quite a sight.
i went all out this visit with the tapas entrees to start, a monstrous rib eye and raspberry and honeycomb sphere to finish. truth be said the steak was a little way over medium rare but it was a wonderful piece of meat; butter tender, juicy and full of flavour. i found the accompanying sauce to overpowering for the meat and left that aside. a great side of mushrooms round out a substantial serve. dessert was the glass sphere which has been on the to do list for a while. the chocolate sphere contents are exposed with the pouring of the warm, rich and deeply delicious raspberry sauce. honeycomb and a variety of other little morsels makes for a fun dessert.
glass is a great space and fun place to dine. the food is sometimes a slight miss lacking that last bit of 'special' and so it is a 4/5 for me. worth mentioning too the service has always been extremely good.
the burger on the barmenuis next. the one at sister restaurant 'mojo' is one of the best in town so keen to see how this one rates.

was in town for work and needed a quick dinner before calling it a night.   service was attentive but our means did take on the longer side of what i'd have expected. 

i opted for the simple option of grass fed sirloin steak. was cooked perfectly and was very happy with an offering of mustards and horseradish followed. i'll have to return again when i've got some more time up my sleeves as themenuhad some great sounding dishes. 

complemented by a beautiful barossa shiraz from their extensive wine list. 

if you're in the cbd and looking for some fine dining it's a good option.

screwed up my lamb order so while they cooked a new one, my friend's venison went cold.
+am not a fan of chips on fine dinningmenu- no matter how much garlic one douses it with.

one of the best dining experiences i've had in my life!
the service was impeccable but let's get to the food...
being a vegan i called ahead and they were more than happy to accommodate me, even asking whether there are any dishes that i am 'sick of being served in restaurants' - yes, i don't want an oil drenched salad...
so they had prepared 3 courses just for me - roasted vegetables for entree, which were light and delicate but rustic and flavourful at the same time.
the main was a plate of fresh ravioli with a creamy filling (maybe cauliflower purée?) served with caramelised figs. i didn't want to start eating them because i didn't want them to be gone :-). they were so so good!
the dessert - always the best part of a meal for me - was a light coconut cake covered in coconut icing and served with a berry sorbet. what a finish to the lunch! perfect!

i apologise that my descriptions don't do it justice, and i hope that glass put these dishes on their regularmenubecause any vegan or vegetarian would be in heaven after the first bite!

thanks to luke mangan for the special creations - i will certainly be back for more. if i are nothing but those ravioli followed by the coconut cake for the rest of my life, i'd die a happy woman... :-)
