solid cuban, sordid wait times. this place is now an official tourist destination, thanks to their absolutely incredible skirt steak plate. it's something i dream about when i'm not inkeywest... yes, it's really that good.
what's not great is siboney's now a mandatory stop for cruise shippers, tripadvisors and cuban lovers, making this once quiet, in-the-know eatery a bonafide celebrity in old town. an hour wait is nothing these days. often times when biking past siboney on any event, you'll see literally 50 people milling about outside, waiting for a table. it's madness all in the name of meat.

i've converted!. what i found at one time to be sloppy cuban cuisine served on paper plates has now truly turned into the best cuban food in the fl keys. my last meal at siboney was just incredible.
best skirt steak i've ever had. perfectly seasoned.

paper plates?. i don't like eating from throw-away dishes and found the food and atmosphere at siboney to be just crappy.
i don't understand why this place is so popular on the island, but methinks it's a tourist thing. i rarely ever see a local eating there.
