exquisitely amazing!!. i brought some friends from out of town to the walhaus restaurant. i made reservations for 8, when i knew it would be dark out. i took my guests to the bow falls parking lot where you can see dimly lit sign that said "waldhaus..." you follow the path beneath the sign and it takes up the hill through the woods where soft lights randomly strung up light a path that guides you in about 2 minutes to a "house in the forrest" which is what "waldhaus" translates into.
upon entering we were greeted with genuine warmth. it looks and feels like an old but well maintained cottage/house in germany. very nicely decorated, very comfortable. our server, served us with the greatest ease, and was just so laid back yet efficient. top notchservicefor sure.
the food is just exquisite!! the appetizers were both mouth watering; we got the escargot which i am a huge fan off, yet quit critical and have a high snail standard. they nail it!! buttery, cheesy, garlicky goodness. we ordered a second portion!! we also got the scallops and they too were out of this world!! the use of morel mushrooms and asparagus ragout it just unreal; there's such a luxurious taste when mushrooms are used properly, and the scallops were seared to absolute perfection!!
for the main course i ate the veal zurichoise which is a rich veal stew served in a fine china dish that's covered to give that element of surprise when opened, and beside it was a mini cast iron pan with a gorgeous rosti and some seasonal veg. now i'm not sure how it's done, but i dumped the stew into the cast iron pan, and as i ate away at my magnificent rosti i took bites of the exquisite tender veal and the velvety delicious sauce it was in. everyone else's food looked unreal, and i tried some of my partner had the spinach-boursin stuffed chicken breast; although i never order chicken at restaurants, that piece of chicken would stand up to any steak, fish, pork at any place i've ever eaten. the beef from the plates of the guests we brought were cooked perfectly and tasted incredible; melted in my mouth!! however, this is a german restaurant, and the best things here are their veal and pork dishes.
no dessert but it looked deadly!
this place is one of banff's best. if you ever have the opportunity to eat at the waldhaus, do it!
