just remembered that i had not added this restaurant from a recent trip to canada. we were fortunate enough to spend a couple of days at the fairmont in banff  & whilst doing one of the many hikes in the area came across this spectacular find. we returned back to the hotel & decided to book a table for dinner. we were highly delighted with theservice& the amazing views, not to mention the old world charm of the decor. the food also did not disappoint. from the baked onion soup with that serious rustic authenticity, through to the rainbow trout with baked vegetables & pilaf. then the crowning glory of that black forest with meringue & choc sorbet. still excites my taste buds as i write three months on!! how could i have forgotten to add this ? only remembered when i was looking back through all those pictures i took

tasty german alpine cuisine. qualityserviceas expected. we started with the baked onion soup and the potato dumplings. we weren't a fan of the cognac beef broth, it was too sweet and a hint sour as compared to french onion soup. the potato dumpling was our favorite of the evening, recommended by the server. three dumplings with nicely crispy coating and flavourful but salty interior sitting on mushroom goulash. this will be our tell everyone story dish.

jager schnitzel was a crispy and well breaded veal, topped with a creamy mushroom ragout. yum. and the venison medallion was also an amazing dish. doubly yum.

worst schnitzel we have ever had. theserviceand decor is good but the food was terrible, especially for the price. the coating on my veal was stale.

great atmosphere, tasty food.. recently had dinner here over easter weekend. i made reservations, not sure if those were necessary as the restaurant did not appear full although we did get an excellent table with a view of the mountains.servicewas prompt and the waiter was knowledgable. we shared the meat and cheese board, excellent selection of meat and cheese at least 4 varieties of each. i had the weiner schnitzel for my entree and the portion was huge, too much to finish. the veal was nicely flavoured and tender. did not opt for dessert because we were too full. the beer list has a nice variety, including a grapefruit beer!

i would recommend having dinner here if you are in banff.

expensive... but amazing!. we ordered the fondue experience ($70 per person) with the beef and bison fondue and it was soooo good! they don't just fondue it in oil... it's some sort of broth. whatever it was, it was delicious! the salad that came as an appetizer was probably one of the best salads i've ever had, and the toblerone chocolate fondue dessert was to die for! i enjoyed every bit of that meal. however i noticed on the bill afterwards that they charged $8 a bottle if you take their choice of sparkling water in the beginning. i could buy the same bottle at my local grocery store for under $3. they asked if we wanted coffee with the dessert and i am relieved that we declined, as they probably would have inflated that price obnoxiously too. we ate for 2 people, and in the end, the bill came to $168 not including tip. this was a once in a lifetime meal for us, and because of the pricey-ness we will probably never eat there again. however, the atmosphere was enchanting and the room was warm and cozy. (they have a big log fireplace lit!) theservicewas also excellent, but being as the restaurant is part of the banff springs hotel, that is the minimal expectation. all in all, i'd probably give it an 8 or 9 out of 10... if you can afford it, it's worth eating there! (the fondue experience was the priciest meal on the menu, so other meal options would not be quite as drastically priced.)

exquisitely amazing!!. i brought some friends from out of town to the walhaus restaurant. i made reservations for 8, when i knew it would be dark out. i took my guests to the bow falls parking lot where you can see dimly lit sign that said "waldhaus..." you follow the path beneath the sign and it takes up the hill through the woods where soft lights randomly strung up light a path that guides you in about 2 minutes to a "house in the forrest" which is what "waldhaus" translates into.

upon entering we were greeted with genuine warmth. it looks and feels like an old but well maintained cottage/house in germany. very nicely decorated, very comfortable. our server, served us with the greatest ease, and was just so laid back yet efficient. top notchservicefor sure.

the food is just exquisite!! the appetizers were both mouth watering; we got the escargot which i am a huge fan off, yet quit critical and have a high snail standard. they nail it!! buttery, cheesy, garlicky goodness. we ordered a second portion!! we also got the scallops and they too were out of this world!! the use of morel mushrooms and asparagus ragout it just unreal; there's such a luxurious taste when mushrooms are used properly, and the scallops were seared to absolute perfection!!
for the main course i ate the veal zurichoise which is a rich veal stew served in a fine china dish that's covered to give that element of surprise when opened, and beside it was a mini cast iron pan with a gorgeous rosti and some seasonal veg. now i'm not sure how it's done, but i dumped the stew into the cast iron pan, and as i ate away at my magnificent rosti i took bites of the exquisite tender veal and the velvety delicious sauce it was in. everyone else's food looked unreal, and i tried some of my partner had the spinach-boursin stuffed chicken breast; although i never order chicken at restaurants, that piece of chicken would stand up to any steak, fish, pork at any place i've ever eaten. the beef from the plates of the guests we brought were cooked perfectly and tasted incredible; melted in my mouth!! however, this is a german restaurant, and the best things here are their veal and pork dishes.

no dessert but it looked deadly!

this place is one of banff's best. if you ever have the opportunity to eat at the waldhaus, do it!
