not that great. good service but the food was below par. my girlfriend and i like to eat out and try quality food. when we order, we get 2 plates so we can each sense the best of the restaurant. we ate on a friday night, february 28th 2014, to be exact.

here's our viewpoint. the tuna role(forgot the name) was great. a very nice explosion of textures and flavors with a ginger sauce that changed it up a little just for fun.

the steak, on the other hand, couldn't hold a flavor itself and was not moist. when introduced to the sauces i was excited about making the steak a little more but felt i could identify a common condiment in each sauce that really took the interest right out of me. the short rib stank. it was so full of sodium i felt like they took it out of a microwave with preservatives and all. absolutely not fresh. hoping the potatoes would muffle the salt was a bad thing to do. the mashed potatoes had more salt that i would deem palatable. the cauliflower had a good texture but was smothered by a high concentration of sodium and stinky cheese. love the stinkycheesebut that along with the short rib made me feel sick.

paterson house drink was okay with some flavors i hadn't blended before in my mouth but if i had to choose, we'd go there just for drinks though i'm not much of a drinker.

the total was $100 for a drink, 2 main courses with some artsy coverup, a vegitable and an appetizer. you tell me if this was worth it.

excellent food, the finest spirits, superior service, perfect ambiance, and fantastic live music.

if you are searching for the best restaurant in the b/cs area, look no further than the republic. my wife and i are local residents who have been drinking and dining here for two years and have never had an experience we did not thoroughly enjoy. to begin, the decor evokes elements of the classic fine dining steakhouse, (dim lighting, rich mahogany, leather seating, candlelight, etc.) but with a swank, las vegas-esque feel. when you walk in and look straight ahead, it is impossible to miss what is known affectionately by locals as the whiskey wall. the tag line of the republic is "steak.wine.whiskey," and they certainly live up to the moniker, boasting what our server informed us is the second largest collection of whiskey, scotch, and bourbon in texas. they have an award winning 200-bottle wine selection, and, as if all this wasn't enough, they also brew their own craft beer, which is delicious. try the moonshine blonde, it was our favorite. they have a great selection of handcrafted, pre- and post-prohibition cocktails, and make an amazing dirty martini with goatcheesestuffed olives. the bartenders are friendly and well-versed, and love to talk about spirits and cocktail recipes.

as for the food, if you want the best steaks in the county, you've found them. great cuts, high quality beef, moist, tender, and packed with flavor. they also have phenomenal seafood, chicken, lamb, and pork. some of our favorites items are the 16 oz new york strip, steak tartare, crab cakes, grilled texas redfish, chicken fried filet mignon, and roasted lyonnaise potatoes. great dessert selection as well, try the homeade grilled apple french toast, it tastes as good as it sounds. excellent coffee, port, and cognac selection for after dinner sipping. the service is the best you'll find in the area, the staff are friendly, well-trained, and extremely knowledgable of cuisine and spirits, without coming off as stuffy or pretentious, as is the case with most fine dining establishments. they have great live music 3 nights a week, with songs ranging from lounge to jazz to blues.

the republic is the perfect place for birthdays, anniversaries, graduations, business dinners, recruiting, or just hanging at the bar and mingling with local celebrities and a&m alumni.

excellent food and service. took my girlfriend here for valentine's day. we started off with the crab cakes for our appetizer. they were crispy, full of crab meat, and served with a delicious avocado salsa. we really enjoyed the bread and butter. for the main course, i had a new york strip oscar style (topped with jumbo lump crab and hollandaise and served with asparagus) with the roasted potatoes. the steak was to die for!!!!! the best steak i have ever had, hands down! the potatoes were really disappointing. they were not even remotely crispy and the bacon lardons has a strange sweet flavor i couldn't figure out. the girlfriend had a filet with the macaroni and cheese. both were totally outstanding, the filet was super tender and the mac andcheesewas complex, creamy, and of course quite cheesy. for dessert, i had the nutella ice cream sandwiches (delicious) and she had the marie antoinette which was amazing!!! this place is pricey but the food is well thought out and well executed.

very romantic place!. i loved thecheeseplate. only problem is they are very expensive, but totally worth it.
