i had been advised to visit the saloon upon visiting sydney by a few friends. when i was walking down the street, i actually walked past the entry, guarded by a lone security guard. unsure what to expect, i went down the stairs and i was transferred to another dimension. this was a world of its own, it felt like something out of westworld. dimly lit, lots of seating options and whiskey almost by the barrel, i loved it. the band was playing some country classics and were absolutely pumping the harmonica. so nice to hear something completely different tomusicwe are subjected to on commercial radio. if you only have one drink here you must have the fresh apple and spiced rum. juiced literally as you rode its so tasty and fresh. i wish i could visit here more often.

funny how progressive hipsters like bars with lots of dead animals. shady pines looks nice but is a pretty standard noisy underground bar. the westernmusicseemed to be droning electronic imitations rather than the real thing. happy hour has great deals, otherwise not worth shutting yourself away.

welcome to the wild west! you wouldn’t think twice about bumping into a texan cowboy in this much-loved, american-themed, underground drinking den.

fronted by another unmarked alleyway door, once inside you’ll need to adjust your eyes to the low light and amount of taxidermy. hopefully you don’t mind drinking your specialty whiskey or craft beer with a texan longhorn bull head looming over you. you also probably need to like country and westernmusicto feel at home here.

dark and kitsch decor with stuffed animals from the americas. after my eyes adjusted and we found a table, i have to admit that the style of this hidden gem of a bar really began to grow on me. themusic(was there music?) was not noticeable enough to detract from the conversation and it was reasonably easy to order from the bar. there's a drink there where they take fresh apples and mix it into some kind of cider right in front of you for $10. that was definitely my favorite drink of the evening. though the other drinks were a light pour. we had about four drinks each that evening and didn't even feel a light buzz, and a couple of the drinks just tasted bad. but other than the couple unpalatable drinks on the menu, the place is pretty cool and i might go there again.

very hidden entrance, it is as if you were back to 16th century(?) america once you enter the place.
it has live countrymusicand a generally cool vibe.
got the junglebird cocktail and shady pines whisky on the rocks. the cocktail is nice and has a tang of bitter. shame it wasn’t made from scratch. the whisky was smooth and easy to drink.
themusicwas very pleasant and the reason why i giving it a 5 star :)

no words can really describe. this place is a ton of fun. service was great, slick and theatrical with very little waiting time. cocktails were fantastic - mine came with a little ice block.musicwas eclectic mix of country, bluegrass, american classics. the vibe was amazing, despite being hip it's not at all arrogant. i will be signing it's praises for a long time to come. sadly i don't live in sydney or i would be back all the time. the taxidermy animals were creepy but fun.

some things are good - it's nice the bar isn't too overly packed in with people on weekend nights, the beer/whiskey lists are decent (though should be better categorized or described), the decor is cheesily great, themusicwas fun. but some things are less good - thee condescending attitude of the bartenders, the cleanliness of glasses (two whiskies, two glasses filled with floating crap), and the absolutely miserly pours. i swear that i didn't even get a full shot. i understand liquor is expensive in this country, but a tiny bit of generosity or at least fairness would have kept me buying more instead of leaving. also, if it's supposed to be american themed, those peanuts should be salted.
