it's the experience that one has that surpasses one sushi joint from the next. nine times out of ten, tim, the owner, is on the floor interacting with his guests. tonight i choose to sit at the sushi bar and had a great time chatting with tim about his choice of fish distributors and the supply in general. one of the specials he persuaded me to try was the toro sashimi (bluefin tuna) delivered not even an hour ago. by far the freshest sashimi i've had, well, in the midwest anyway. other rolls i sampled were the fanasric roll, huge chunks of lobster were the star in this one, and the green dragon roll, the typical yummy eel and avocado combo. the servers were very attentive, made saki recommendations, and were friendly. possibly the only downside that i noticed was that the rolls may have been a little more pricy on average in comparison to other sushi spots in the des moines area. but after chatting with tim about how he does business, the call he can make to hawaii tonight and have fish delivered tomorrow, that explains the price you pay for hands down the freshest sushi in town.
