one of my best restaurant experiences ever!. honestly, i am a self-proclaimed food snob. i've been throughout the country, and in several places internationally, and i like to think that i know my food. and with that introduction, i can honestly say that i had one of my best restaurant experiences ever at parigi. iorderedthe rack of lamb, which came double cut, as it should, and was absolutely perfectly seasoned on top of just a hint of olive tapenade. on the side was a plate of pea and basil pesto orzo, which may sound unusual, but which was an absolutely perfect compliment to the lamb. i loved it: the lamb was perfectly salty and seasoned, and the mint/pesto, instead of being on the lamb itself, was served in the orzo as a side accompaniment...a brilliant decomposition of a classic dish that really worked. the service, while perhaps a bit slow for some, allowed time to relax with a glass of malbec from their well-stocked bar. and the owners, janice and chad really care about their customers. while it's not that unusual for restaurant owners to come out and greet their guests, these two really wanted to talk, and to get to know their clientelle. i got the feeling that they have a lot of repeat regulars there, and i will absolutely be one of them from now on. if you're ever in dallas, you absolutely have to try parigi!
