featured photo: chilean sea bass prepared in a traditional vietnamese “clay pot” method by chef fredrick ngo of jimmy’s steak & seafood. photo by jim noetzel. . whenever i’m attempting to sum up what i find so special about shreveport-bossier’s food scene, i always end up circling the idea that this place is really, truly unpredictable. that is especially true of outstanding international cuisine, which often surfaces in unexpected places. case in point: i recently had the pleasure of experiencing chef fredrick ngo’s clay pot dinner at jimmy’s seafood & steak, a fine dining restaurant located inside ofmargaritavilleresort casino in bossier city (see their menu page here).

outstanding!. a great new addition to a very limited fine dining scene. situated at the far corner of themargaritavillecasino you loose the whole casino vibe as you walk through the doors. our server wade and his assistant ervin did an impeccable job, pacing the meal perfectly. the bread basket served with 3 different flavored butters was a nice start. the portobello mushroom appetizer was terrific, they are marinated in balsamic vinegar, grilled and topped with gorgonzola. next up the louisiana seafood gumbo is spectacular. i could easily make a meal of it! our entrees, the down south bouillabaisse and pompano were great. i'm so glad to see a real seafood restaurant with much more than just the regular local fair. they fly in fresh fish, the clams, mussels, and crab were equally fresh and perfectly cooked. the pompano was the best fish i've had since leaving florida, the pickled watermelon mango and papaya salsa was incredibly good. we had no room for dessert, the portions are extremely generous for fine dining. one tip: walk in the back door, down the river walkway to avoid the noise and cigarette smoke from the casino.
