love their atmosphere, professional and friendly service from the staffs and good quality of ingredients used in the dish. tried the smashed avocado with toast and signature dish as recommend, it served with corn fritter, salmon and poach eggs. hightly recommend

show me the meat - my parents saw a korean program featuring restaurants/cafes in australia that specialises in locally sourced sustainable food & glass brasserie was one. my ma had a list of meats she wanted to try (as featured in the tv show) & queried about whether it was grass fed or grain fed, how aged it was etc. then to my amazement our waiter brought us a tray of meat explaining the different cuts of meat!

as the dishes arrived, i felt like a tyrannosaurus rex. meat! glorious meat. we ordered waygu & lobster $85 (omg, it melted in your mouth. my favourite dish), eye fillet (excellent ) $55 & greenham tasmanian ribeye (awesome) $65. we had a side of market vegetables $18.

it was a divine lunch experience! i wish i had room to fit in dessert or a room at the hilton to sleep off my meal 😁

the wait staff were pleasant.

i would definitely go back, there are so many lovely dishes i want to try.

3 words: go, eat, here.

place was 75% full when we got there and became 95% full midway thru our dinner. add 1 more word above: 'reservation'. we were sat down almost immediately after a bit of confusion re our reservation.

let's start with the standouts.

kingfish sashimi with ginger shallot persian feta. it's gotta be one of the most exquisite sashimi i have tasted. freshness: 5/5, size/thickness of cut: 5/5, presentation: 4.5/5, taste/seasoning: 4.5/5. each of the 6-8 slices were consistently awesome melt in your mouth yet retains that springy firm typical of good kingfish. the seasoning of each slice was uniformly absorbed but never overpowering. delicately delightful.

rare wagyu beef, pickled mustard leaf, smoked mushroom, puffed barley, soy dressing. i am not gonna spoil it by trying to describe how this tasted. besides, i am running out of superlatives 😁. your loss if you skip this. 4.5/5.

the salmon was another highlight. gosh, hats off to the chef who managed to cook the fillet just right. one could practically taste the sweetness of the salmon fat. it is no small feat that the salmon retains the juiciness throughout the whole fillet. no deviation from each bite, no bits where one is slightly disappointed by a mouthful of overcooked/undercooked pieces. 4.5/5

the honey/oregano baked olive oil cheese, fig, beetroot, dandelion, spiced walnut was a culinary journey in itself. presentation: 4.5/5, taste: 4/5. it was beautiful.

the 250g sirloin was the sole 'letdown' by which i dont mean it was anything 'bad'. maybe my taste buds have been overly revved up by the above dishes 😆. guess i was expecting prime steak restaurant type of steak. this is nothing but. this is more demure, less masculine sirloin. i dont know how else to put it. personally it is 3.5/5.

truffled mash, creamy silky goodness 4/5
parmesan truffle fried 3.5/5

we were stuffed so ordered just the 1 dessert: vanilla creme brulee. 4/5

service was upbeat, efficient and unobtrusive. they did mess up our truffled mash by giving us the normal mash. after a quick apology, they whipped out the truffled mash and politely asked us if we wanted the normal mash on the table for free. not gonna tell you if we kept it 😜

i’m always a little hesitant to revisit a place that didn’t leave a lasting impression the first time, but i’m sure glad i came back to glass brasserie. i first dined here ages ago for dinner, and nothing particularly stood out for me. i remember having a rabbit dish for mains and it unfortunately wasn’t to my liking. however, coming here a second time around, it’s wanting me coming back for more!

we dined for a birthday celebration and had reservations for 6 people. we were accommodated well as a group and the service was helpful and friendly. the interior remained the same, being very well presented with high ceilings, open space, and plenty of seating available.

we skipped entrees and went straight for mains, each ordering our own. i’ve never had steak tartare before, so i was umming and ahing on whether to order it, but i hear this place does one of the best! i bit the bullet and ordered the main size serving for $44.

so steak tartare is finely sliced raw beef, and when it comes to the table, it looks exactly like that, topped with a quail egg yolk. so it may not win the award for the most appealing dish, but in terms of flavour it packs a punch! it comes with an assortment of accompanying condiments, which was throughly mixed in at the table by our attendant. the beef was beautifully soft in texture, with no ‘raw meat’ after taste or anything. i found it similar to eating pate, spreading it over some tapioca crisps which were light and tasty. the only issue i had was the serving was a bit too much for one person, so i should have opted for the entree size. the main size would be good to share as a group, but i was eating it on my own.

now for desserts, ordered 3 to share between us and got the torched meringue, sticky date soufflé and the glass raspberry chocolate violet crumble. they were all delicious, but my absolute favourite was the sticky date soufflé! it was sweet, soft and melt-in-your-mouth perfect. it’s up there with one the best desserts i’ve had.

oh glass, it has been a while hasn’t it? so much has happened since last we tangoed, but you are still as lovely as ever and you haven’t aged a bit. a perennial favourite, i went for a lovely dinner at glass last night, seeing as my mid-week luncheon plans at flying fish fell mercy to scraping rotors and failing brakes.

inside the hilton hotel and with luke mangan at the helm, it should be amazing. however, it is a bit underwhelming. firstly, i'm not sure if tonight their extractor was not working but this isn't the first time i have been, where the whole restaurant is almost smoky. i smell like my meal. secondly, the service is discrete almost to the point that they are invisible. they are pleasant but it is sometimes difficult to get service and it is generally hurried. thirdly, there is no real ambience. no music or sexy lighting and seemed quite impersonal or transient.
the food is extremely tasty but on the "small" portion size. we ordered the gnocchi (delicious), zucchini flowers (also delicious), and the tarbot (delicious). however if your are hungry, three courses is what you will need. the souffle was perfection.
overall it seemed like a nice hotel restaurant but a little too pricey for the experience.

outstanding. had the gnocchi and crab omelette with miso broth, both were absolutely terrific!!!

a bit on the pricey side but so worth it.

food and ambiance were fantastic! we only had tapas and mains which were delicious - only downside is  our mains came out about 1 hour after finishing out tapas.

even though we turned up with no booking and during busy lunch time the wonderful staff made sure we were looked after and found a spot for us.

food is truly amazing and exceeds expectations. the decor and ambience equally remarkable. the $28 lunch deal is a steal for what you get.

when you come in groups they give terrible customer service. we were a group of 8 and has poor service the whole night, they even forgot to give us tea and coffee when that is part of the degustation menu. not impressed. food is good, but you can go other places instead.

went with the preconception that the food would be over complicated but was presently surprised. don't be put off that it's located in a hotel.

staff were attentive at first but dropped off. a little noisy but still a nice atmosphere.

we'll be back.

a fantastic start to our honeymoon and we will definitely go back.
the ambience here is spot on, we like enough noise that you can chat to each other comfortably without thinking people are listening to you. the lighting was low and romantic. we had a booth which was cosy and relaxed.
amazing wine selection. then the food. absolutely divine and faultless. excellent value for money. wonderful service which again could not be faulted. even had our french fries taken off the bill as they came out halfway through our steak main. we did not expect this and were embarrassed that this is what has come of service that no one can wait anymore, none the less a simple gesture that stood out for us and probably meant nothing to them to cancel out the chips. still, we appreciated being kept informed and having that extra little detailed service. thank you to all staff at glass, we will be back next trip.

the glass brasserie has fresh honeycomb to delight your tastebuds at breakfast. what else is on the menu?. i had the pleasure of going to the breakfast buffet at glass brasserie. if you are a breakfast buff, for $42, you can enjoy the full australian buffet. i've never seen fresh honeycomb at a breakfast buffet before so i was pleasantly surprised by that. it was the first thing that got my attention.

glass is worth a visit for the chance to admire the space and the view across to qvb alone. the bar area offer this the best and the mighty wine racks that extend 2 floors up are quite a sight.
i went all out this visit with the tapas entrees to start, a monstrous rib eye and raspberry and honeycomb sphere to finish. truth be said the steak was a little way over medium rare but it was a wonderful piece of meat; butter tender, juicy and full of flavour. i found the accompanying sauce to overpowering for the meat and left that aside. a great side of mushrooms round out a substantial serve. dessert was the glass sphere which has been on the to do list for a while. the chocolate sphere contents are exposed with the pouring of the warm, rich and deeply delicious raspberry sauce. honeycomb and a variety of other little morsels makes for a fun dessert.
glass is a great space and fun place to dine. the food is sometimes a slight miss lacking that last bit of 'special' and so it is a 4/5 for me. worth mentioning too the service has always been extremely good.
the burger on the bar menu is next. the one at sister restaurant 'mojo' is one of the best in town so keen to see how this one rates.

was in town for work and needed a quick dinner before calling it a night.   service was attentive but our means did take on the longer side of what i'd have expected. 

i opted for the simple option of grass fed sirloin steak. was cooked perfectly and was very happy with an offering of mustards and horseradish followed. i'll have to return again when i've got some more time up my sleeves as the menu had some great sounding dishes. 

complemented by a beautiful barossa shiraz from their extensive wine list. 

if you're in the cbd and looking for some fine dining it's a good option.
