consistently good. there are a lot of negative reviews here, but i've been to eva a bunch of times in the last year—on dates, impromptu dinner and drinks with a friend, and i usually take visitors from out of town there for dinner, and it has never disappointed. it has always been good, and sometimes excellent.
i've always ordered lots ofsmallplates for sharing, and recommend it—this isn't somewhere i'd go for lunch by myself. i only had pizza once and didn't love it enough to order it again, but the daily risottos are amazing—creamy, flavorful, perfect texture. there are a lot of great veggie dishes to snack on, including the green beans, snow peas, cauliflower with kalamata olives and the amazing brussels sprouts, which are smoky and oily and nutty and delish. the chicken wings are ridiculously good—succulent, flavorful, sticky, everything one could want from chicken wings. the gnocchi are satisfying, if a little bit bland. the bread with three butters is a no-brainer. i seem to remember the oink oink oink (?) being less awesome than i expected, but perfectly fine. overall, the kitchen is liberal with salt and fats, so don't go in looking for health food. that said, usually when i eat there well over half of what goes in my mouth is fresh vegetables.
the service is friendly, good humored, and laid back. and pretty slow and slapdash, so i go when i'm prepared to relax and hang out and enjoy the company i'm with and the food and drinks we're sharing. i would never bring a group of more than six people or asmallchild or baby there—it's not that kind of place. it is the kind of place where i feel equally at home dressed up or down, which is a plus. also, the last time i ate at eva, an item that took a (particularly) long time showing up was taken off the bill without our complaining about it. i'm totally glad that eva exists in salt lake.
