4.5/5 for three boars. three boars is the talk of the town at the moment and everyone has great things to say. it's a brand new place in garneau, an area exploding with all sorts of culinary delights. the restaurant is on the small side, and it encompasses two levels and a patio. "bright and airy" are the adjectives that come to mind upon entering. beautiful distressed woods as far as the eye can see, gorgeous minimalist light fixtures - this is the latest place for hipsters to flock.
i had attempted to make a reservation, but was informed that they only do so for parties of 6+. it was no problem, we showed up at 5pm on a saturday and were seated without issue. we followed the server past the downstairs bar, up the narrow stairs, and to a cozy corner table surrounded by (open) windows. such a beautiful way to enjoy a summer meal.
the menu is presented on a clipboard, with the first page as food items, and the following few pages as drink options. they offer a long list of beers and other concoctions. the one thing that caught me off guard about the food is that it is served tapas-style - which i'm perfectly fine with, i just didn't know. within my party of three, we decided to each pick a dish which we would all share. everything sounded quite delicious. not in the mood for alcohol, i opted for a cherry tree cola to drink. old timey and yummy, this had a distinctive cherry flavour combined with a more "natural" tasting cola. perfectly good!
onto the food, once the order was placed, the various plates arrived in no particular time or order. it's the kind of place where you'll get some drinks, relax, and graze over your meal as it arrives. it may be the perfect hangout location. our first dish to arrive was the smoked black cod brandade (pickles, toast - $12.00). a very nice, light start. a brandade is traditionally an emulsion of salt cod and olive oil eaten in winter with bread or potatoes. turns out, it works as a summer dish also! the pate-like cod was smokey and creamy, made up of deliciously delicate yet robust flavours that easily spread onto the toast. i liked the pickled veggies (fiddleheads, green beans) as an extra direction to the flavour on this plate.
next out was the free range chicken bánh mì (house made pate, sriracha mayo, pickled carrots & daikon, cilantro - $10.00). this was a take on the vietnamese sub, and it was executed excellently. every bite was a burst of flavours. the chicken was juicy and cooked to perfection, while all of the other components came together harmoniously within the crusty bread.
our last entree dish to arrive was the spring creek ranch beef brisket poutine ($13.00). this stole the show, so much so that we ordered a second one. i loved the unique take on the standard poutine; potatoes instead of fries. the cheese curds that you would expect were ever-present and the delicious gravy seemed very involved. of course the star was the brisket, which was tender and flavourful. every bite was amazing.
when it came time for dessert they had one option available which we took. it was similar to a shortcake with fruit and mascarpone. a nice light finish, the fruit (strawberries and blueberries) were bright and fresh, and the mascarpone was creamy and delicious. a very nice end.
the menu at three boars changes daily because of their dedication to local ingredients. this is a bit of a trend at the moment - but an excellent one to get on board with. they are making fresh and delicious food and they have a conscious about it. you'll feel satisfied and as if you'd had a wonderful meal that isn't weighing you down. there is a whole lot to be appreciated about this new place!
