i am afraid i cannot write an objective review about soul bistro - this bistro is akin to a gastronomical soulmate of mine and i love the atmosphere, the food, the concept, the interior, the location. in fact, i like everything about soul bistro and wish it was mine - apart from their coffee ;-)
seriously though, this is exactly what i imagine any hip bistro would look like. the giant storefront windows create an airy space that isn't even hampered by the somewhat crowded seating arrangements. i also enjoy the elevated bar area that quietly takes a scenic backseat in the entire layout of the main seating area, but you still see it and it still reaffirms the fact you're sitting in a bistro. it just works for me - i like it!
coming to the interesting bits, the food is pricier than average but still nothing too offensive and given the quality ingredients and very central location (their rent must be massive) i can't object to that. what's important is that they don't let you down. soul offer a spectacular fish & chips, if i am not mistaken, the only one in brno, though they do wrap it in brown packing paper rather than yesterday's newspaper. their variations on cold beef salads are too good to pass up and same can be said of their beetroot a white cheese salad - a combination i've immediately added to my favourites when cooking back home.
what else is good here? well the deserts certainly are! can't recall a day when they wouldn't have at least 4 cakes to choose from though most likely you'll find half a dozen and the only trouble you'll have is choosing which one to try first!
oh, and if you come by in colder seasons, try out the chai tea they serve in cute enamel mugs.
i could probably go on and on, but my point is i love this place and it's always among the first to pop in my head when considering a place to go eat out. so on you go, try out soul bistro and after a tasty meal you can move on to some tasty beer on a particular corner of jakubske namesti ;-)
