consistently one of my favourite macaron shops to stop by in calgary, this french boutique patisserie offers a taste of parisian lifestyle in the form of delicious macarons and delicate teas. i found their macarons to be a perfect combination of a delicate shell with a natural tasting filling that doesn't leave you feeling overwhelmed by sweetness. their macarons have managed to attain a gentle balance between enhancing the desired flavours, while creating a smooth, light texture that makes eating 6 or 12 of these an easy task. one thing i also enjoyed aboutolliais the teas that are offered as well, which our quite nicely with the macarons available. i am always surprised by the diverse amount of choices in this shop, and have seen some truly interesting combination of flavours, such as wasabi sesame, apricot chèvre, as well as classic favourites, pistachio, vanilla, rocher, etc.olliahas managed to collaborate with a number of local sources as well in creating different opportunities for pop-ups and embracing community culture. one piece of feedback that i would have for this patisserie would be to be careful in terms of managing the consistency across their locations, as there has been the odd time where i have had an occasional macaron be quite hard, or just the opposite where it becomes too mushy to hold. overall, a great choice for newcomers to the macaron game, or for seasoned veterans to enjoy!
