wow.olliahands down makes the best macarons i have ever tried in my life. every flavour is amazing- i would know as, within 5 minutes of walking in and buying 10 macarons to share with my cousins, we were back for more. compared to the neighbouring corbeaux, their prices are more reasonable as well. i simply cannot express how amazing their macarons are. i honestly was never a big fan of macarons before, but ollia's are perfect in texture and taste, my cousins and i were all equally impressed. if you're looking for the best macarons in calgary, this is the place to go.

i took a macaron baking class atolliaand had the best time! our instructor was very knowledgeable, fun, and very responsive to all of the questions the students had. i would recommend anyone interested in learning how to make macarons (or just wanting to buy some - their cotton candy macaron is so good!) to visit ollia!

i had triedolliamacaroons at a trade show and absolutely loved them, so much that i thought about them constantly ! i was finally in the area and happy to be able to go in and purchase a box- a variety of flavours. i was excited to try the savoury flavours but ended up finding them too strong and just not for me, they left a real bitter taste in my mouth. i ended up just taking a single bite and throwing the rest out. the sweet ones were good, but did not taste as fresh as when i had tried them before. i would go again but perhaps just purchase 1 or 2 at a time.

consistently one of my favourite macaron shops to stop by in calgary, this french boutique patisserie offers a taste of parisian lifestyle in the form of delicious macarons and delicate teas. i found their macarons to be a perfect combination of a delicate shell with a natural tasting filling that doesn't leave you feeling overwhelmed by sweetness. their macarons have managed to attain a gentle balance between enhancing the desired flavours, while creating a smooth, light texture that makes eating 6 or 12 of these an easy task. one thing i also enjoyed aboutolliais the teas that are offered as well, which our quite nicely with the macarons available. i am always surprised by the diverse amount of choices in this shop, and have seen some truly interesting combination of flavours, such as wasabi sesame, apricot chèvre, as well as classic favourites, pistachio, vanilla, rocher, etc.olliahas managed to collaborate with a number of local sources as well in creating different opportunities for pop-ups and embracing community culture. one piece of feedback that i would have for this patisserie would be to be careful in terms of managing the consistency across their locations, as there has been the odd time where i have had an occasional macaron be quite hard, or just the opposite where it becomes too mushy to hold. overall, a great choice for newcomers to the macaron game, or for seasoned veterans to enjoy!

this is a continuation of my last post dedicated to lindsay, the owner ofolliamacarons and tea. lindsay gave me the opportunity to take some photographs during one of their baking classes. i arrived on tuesday, september 8th for the 6:30 class. the shop closes at 6pm and they take 20 minutes to clean up and prepare for the class before re-opening the doors at 6:20. i arrived 10 minutes early and met a lady who was also there for the class. we chatted for a bit and i asked her how she heard about the baking classes. she told me she heard about them when she visited the shop. she checked the schedule on the website and signed up for one of the classes. i told her i was there to take photos and she advised me that lindsay had sent an email out to the group letting them know that i would be there. she included the link to my blog in the email, which gave the class a chance to take a look at it. as everyone began to arrive, we were directed to the kitchen located at the back of the shop. there we met the talented macaron chef salvador. the classes usually last between two and a half to three hours –the one i attended lasted two and half. instead of me rambling on in words, here are some of the many photos i took outlining the 8 steps to making a perfect macaron.

this blog post is very special to me because it will be my first dedication blog in appreciation for the support and encouragement i have received from lindsay rousseau. it’s not everyday you come across someone that leaves genuine words of encouragement in your life. lindsay and her husband, david, are the owners ofolliamacarons & tea located in the heart of 17th ave. how did this all begin? well, you can read my blog post from that day here. one thing that wasn’t mentioned in that blog post was that lindsay reached out to me over twitter before i even met her. i have to say i was pretty nervous when i walked into ollia, but my nervousness disappeared once lindsay and i started talking. she offered me insightful tips on how to approach restaurants and owners for my reviews, and it was her words of encouragement and support that have really brought me to where i am with my blog today. i have been in contact with lindsay since that day and we set up a time when i could return toolliaand have the opportunity to learn more about the shop.

time and time again i attendolliaand leave happy. their macarons are the best in the city - the meringue shells are extremely soft and the ganache melts right into it with each bite. they have some great flavours like rocher and dark chocolate with salted caramel - but you need to go early to snag them.

yesterday i was invited for a sneak peak of a new boutique shop opening up on 16 ave sw. not only are they basically my new neighbours, but they’re literally a hop and a skip from the ever so popular 17th ave. so without further ado, here is my review of ollia.ollia(pronounced: oh-lee-ah) is stacked with shelves of premium loose leaf teas and rows and rows of those colourful french macarons we all love.

ollia macarons & tea privat....olliamacarons & tea
private macaron baking class
saturday, april 11, 2015

i wanted to do something abit different for my sister’s bachelorette party that doesn’t involve bar hopping and staying in the city. i had read a review through yelp about macaron baking classes atolliamacarons & tea so thought it would be a great activity for a bachelorette party.
our instructor (also the owner), david was awesome! he was so informative and patient with our group. we had made raspberry ganache macarons and vanilla cheesecake macarons. david had provided everything for the class as well as step-by-step instructions for everyone.
as a private group, we were able to byob for the class which was a perfect touch for our bachelorette group. david also had provided our group with rooibos tea and 3 flavors of macarons for everyone. passionfruit milk chocolate was my favourite!
i absolutely would take ollia’s macaron baking class as well as recommend it! it was so much fun!
i would defiantly be back for ollia’s macarons and tea!

delicious!.olliahas quickly become my favourite place in calgary for a sweet treat! the macarons always taste fresh and come in a wide variety of amazing flavours. the owners are so passionate about their craft, and offer suggestions for wine pairings with the macarons. these delicious cookies are better than any i had in paris, and the constant offering of new flavours brings me back every week for a half dozen!

amazing treats. i have been toolliaabout 10 times now (i know cos i filled one of their "merci" card and got 6 macarons for free!!!!) and i have never been disappointed about their macarons and their teas. in fact it's always been a hit!
their macarons flavors are out of this world, something i had never experienced in calgary and they have new ones every week! the service is great, friendly, not over the top, just on point.
i often pair my macarons with one of their tea, the blueberry matcha latte keeps me coming back, and they do their own london fog syrup...this place is a great addition to calgary!
