a frequent resturant diner, dining in and taking out, with my wife. we eat out 5 times a week.. i do not like the warning on your menu that is coupled by statements from your staff that ground meat can cause serious illness or death. many menus have statements that state that meat, fish, both fresh and shell fish, served partially cooked or raw, if consumed in that manner and can cause serious illness or death.
nevertheless, vallozzi's, olive garden, supper club, old spitfire grille, la tavala , wooden nickle, and many others serve fried grround meat rare and warmer. greensburg country club, the madison club and cherry creek all serve rare burgers, although you may have taken over the kitchen at cherry creek. my wife and i visit our children often in connecticut, n. y. c., philadelphia, and minneapolis. it is usual that good resturants serve ground meat rare, while not so good resturants refuse to do so. ground meat that contains ground up bone, while being 100% beef, has all the cattle's bone and that type of meat can certainly cause severe illness or worse.
the meat at walmart's or sam's club that is the lowest price has all the bone, including the head bone. people who see on your menu that rare or medium rare ground beef will not be served in that fashion will know that you are using the cheapest ground beef you can buy. i think you are not doing.
