the happy grilled cheese food truck opened in jax in march of 2013. since then it appears the city and social media has rapidly fallen in love with their cheesy goodness.  after our trip to enjoy their cheesy goodness i can say we have too. they offer anything from a basic grilled cheese called a happy melt to grilled cheeses with mac n cheese, apples, bacon, and even bbqchipsinside the grilled cheese. they set up all over town. they even offer a french toast melt with cream cheese and fresh berries squeezed between two slices of french toast. you can find their daily location on their facebook or twitter pages which we have listed in this article. they also are frequently present at food truck rallies all over the city. the happy grilled cheese happy melt facebook:   https://www.facebook.com/pages/the-happy-grilled-cheese/284780458300232 twitter: https://twitter.com/happygrilledchs

makes me happy. my co-worker/friend wanted to visit the the happy grilled cheese food truck for lunch when they were in our work vicinity back in early june, and i decided to venture along.

i ordered the caprese grilled cheese sandwich (about $6) along with a dipper-size cup of soup (about 4 oz in a short styrofoam cup, perfect for dipping your sandwich) for $1. it was delicious! a simple sandwich made on two slices of white sandwich-size bread, mozzarella cheese, slice of tomato, and a good spread of pesto. it wasn't greasy or as buttery as a traditional grilled cheese--personally, i like a little more butter on mine. my friend ordered their homemadechipswith his sandwich. i sampled one; it was super thin, crispy, and well-seasoned.

i have been eagerly anticipating the rollout of the happy grilled cheese truck since seeing whispers about it and a menu leak on twitter. not just regular grilled cheese sandwiches (delicious on their own merit) but a creative variety of them?? i was so there. and so i was, on opening day: the happy grilled cheese truck the truck features a rotating variety of it’s grilled cheeses, and on this day the offerings ranged from plain to with bacon to with lots of bacon. i chose the latter, obviously, porky the melt (american cheese, cheddar, bacon, ham, pulled pork, caramelized onion, and tomato): porky the melt with all this meat, porky the melt was really more of a grilled sandwich than a grilled cheese. it was a good sandwich, just not what i was looking for from a grilled cheese vendor. my second visit yielded a brisket and blue melt (mozzarella, blue cheese crumbles, smoked brisket, arugula and red onion), along with somechipsand beer cheese soup/dip: brisket & blue melt this sandwic
