bread class review. i went with my boyfriend to enrico'sbreadclass a few weeks ago. before we even got in the car i had a good feeling - at the last minute i had to reschedule and they were exceedingly gracious about it. once we got there, a huge spread of pasta, cheese, pastries, sausages, hash, quiche, chicken livers, pretty much everything was out on the table for our consumption. definitely don't make the mistake of having anything for breakfast - there was so much to try, and it was all great. while we were stuffing our faces, the owner described history through the lens of breadmaking. this was far from the full story, so i wasn't completely sold on the narrative, but it was an interesting theory to think about. he got progressively more daring and boisterous as the class went on, which was relatively amusing. we went over how to make a nice skin on dough, what not to do to bread, how to make focaccia and a myriad of other topics. he had genuinely interesting stories and tips that made the hours fly by. i'd take some of his monologues with a grain of salt but it was definitely a fun experience, and we will definitely try to return for dinner someday.
