wagyu!! well, f1 that is ( 50% full blood and 50% something else ). i couldn't find the info on stanbroke beef's website. ) but the restaurant staff assured me it was f1.

the steak.
f1 is not without it's charm. 'cross bred' wagyu although not as highly valued as 'full blood' can still have some amazing flavour characteristics. it can also be total crap! black hide offered a few cuts, the two i tasted were the sirloin and rib eye.
'chefs recommendations' this time landed my steak at a pinky medium rare. not what i would have chosen but i dug in. boom! all the tenderness, all the moisture, it was definitely a 5+ but something was missing. flavour. don't get me wrong it was a great steak but i have a sneaking suspicion that it was too fresh and the flavours had still time left to develop. the rib eye however was on point, truly divine and it wasn't hard to tell the difference.
the experience over all was great. all the sides were impressive. the service was lovely and the wine was what it needed to be.
the hack will be back - for the organic next time.)
