laid-back atmosphere but doesnt skimp on quality! we stopped in on our way thru to myrtle beach. it was easy to find right off the highway and prices were definitely reasonable for such a delicious dinner! tons offlavorwith every item, and btwn the 3 of us we ordered most of the menu.

my gf and i went for dinner last night with high expectations and were sorely disappointed. ribs were the best thing we had but were nothing special. pulled pork had no smokeflavorand was a bit mushy. i wouldn't say it was bad but it was pretty pedestrian fare. the brisket again, no smokeflavorand really little beef flavor. my portion was dry and crumbly. sauce made it edible. the sides were ok. we had white slaw, collards, potato salad and "baked beans". everything but the beans were average i would say. the beans were bad; no sweetness, the beans were a mix of kidney and black and under cooled with a bitter starchiness in a very pasty sauce. the pulled pork egg rolls were the low point of the meal. they came out overly greasy, as if the frying oil wasn't hot enough, and filled with a very paste like pork. there were no chunks of meat in there. we spent $51 for a very mediocre bbq meal. shame on you pig daddy.

so this is north carolina barbecue?. i'm no connoisseur of barbecue, but i have eaten my share of it in joints in illinois, michigan, ohio, pennsylvania, california, oklahoma, texas and a few other places. bibs was my introduction to the vinegar-based barbecue of the southeast. i was hopeful as my southern wife waxes rhapsodic about a place called zeb's in danielsville, georgia. bibs is decorated in subway car moderne. the staff is super-nice. ordering is at the counter. abandon all hope of a heart-healthy meal, all ye who enter here. the meats are fall-off-the-fork tender from long cooking, but unfortunately a lot of theflavorhas also been cooked out of them. the pork doesn't taste much different from the brisket. entrée plates include cole slaw (red or white), hush puppies, toast and a side. my wife objects that hush puppies go with seafood, not barbecue. (whatever.) unlike most other barbecue places i've been in, there's no extra sauce out where the patrons can get it to add to their plates. just ketchup. everything swims in sauce, grease or other liquid. what sauce i could taste lacked bite. the red slaw was fair. the four-bean baked beans were supposed to have some kind of chili peppers in them but were fairly tasteless. the toast was like texas toast, i.e., drenched in (i think) butter. i didn't think much of bibs, but maybe something escapes me that all the reviewers who love it can appreciate.

other reviews here are off base. i think the reviewers here have never eaten bbq outside of nc....fine, but don't disparage something different cause it's different. this place is long overdue for the triad and offers some of the finest.....beans, meat and slaw i have had across the country. the puppies were excellent...though i thought they were burned at first, they actually were perfect upon poppin them in my mouth...and what was that flavor?....took some 2 hours to realize it was sage and onions...kapow! love it. not really a southern spice but thats what makes them so special. only have 3? craft beers but they got that right with anchor, highlands and a summer beer...very nice for a small selection. beans are flat out the best ever period, same with the beef brisket sandwich (if you haven't been to the st loooey lower mid west). mac and cheese wasnt great, but everything else i tried was pretty amazing for winston and would hold its own across the states. the best thing is the price...i mean the beef brisket sandwich plate was 6 bucks....i paid 11 for the same thing in another state. basically a lunch here will last you all day and all night, a bargain eatery that brings a differentflavorto the triad...and while i love vinegar nc bbq, this is a welcome change and no you dont need extra sauces and crap to douse your meat....when i read the whiners wanting extra sauce...well, you have no clue...its about the meat smoked to perfection flavor...no sauce needed, the excellent fries dont even need ketchup...but you nc red-hot-dog eaters need to give it a try and taste meat...not sauce... no i dont work here, im just damn skippy happy they opened this up.
