so this is north carolina barbecue?. i'm no connoisseur of barbecue, but i have eaten my share of it in joints in illinois, michigan, ohio, pennsylvania, california, oklahoma, texas and a few other places. bibs was my introduction to the vinegar-based barbecue of the southeast. i was hopeful as my southern wife waxes rhapsodic about a place called zeb's in danielsville, georgia. bibs is decorated in subway car moderne. the staff is super-nice. ordering is at the counter. abandon all hope of a heart-healthy meal, all ye who enter here. the meats are fall-off-the-fork tender from long cooking, but unfortunately a lot of theflavorhas also been cooked out of them. the pork doesn't taste much different from the brisket. entrée plates include cole slaw (red or white), hush puppies, toast and a side. my wife objects that hush puppies go with seafood, not barbecue. (whatever.) unlike most other barbecue places i've been in, there's no extra sauce out where the patrons can get it to add to their plates. just ketchup. everything swims in sauce, grease or other liquid. what sauce i could taste lacked bite. the red slaw was fair. the four-bean baked beans were supposed to have some kind of chili peppers in them but were fairly tasteless. the toast was like texas toast, i.e., drenched in (i think) butter. i didn't think much of bibs, but maybe something escapes me that all the reviewers who love it can appreciate.
