several years ago i sampled chef pat pascarella’s pasta bolognese and it was one of the best bolognese i had ever tasted. since that time, pascarella opened barsugoon wall street in norwalk and i have enjoyed many of chef pat’s creations. he recently introduced his full-table pasta tasting menu and invited ctbites to sample the five courses…from a straightforward tomato and basil to a complex lobster, morel and truffle. the incredible bolognese that chef pat served me several years ago was a prelude to the fantastic five courses that i enjoyed with wine pairings from sommelier megan pacarella.

slightly more than a year ago, restaurant barsugoopened on wall street in norwalk featuring a variety of owner/chef pat pascarella’s fantastic pizzas, meatballs and delectable pastas. pascarella recently handed the reins of the day-to-day culinary oversight to chef paul failla, and ctbites re-visited to taste chef paul’s cuisine and his creative spin to the menu.

one of my favorite restaurants!. when barsugoopened on the edge of wall street in norwalk i was skeptical. squeezed into a storefront spot between a questionable looking liquor store and an even more questionable "grocery" store, i was thinking that this place better have some darn good food, or they're not going to survive. well they do...and they have. in the year that chef pat pascarella's barsugohas been open it's become our go-to place for brunch, lunch, dinner, and even drinks. the food is outstanding (pastas, meatballs, pizzas, salads!), the wine and cocktails are generous and reasonably priced, and the jazzy atmosphere, and consistently good service make this a fun, easy spot that feels like home.

lunch. we had lunch today at barsugoand have to say - was totally disappointed. the portion size were really small compared to the price. the waitress, though pleasant, brought the bread with our meal after we were way done with our full meal. and worst, the bread came out refrigerator cold. it was funny -she brought the bread and asked if she could take all our dishes out. she must have thought people eat bread like dessert..... very middle of the road.

located in norwalk, barsugois a fantastic restaurant with a menu that features six different types of meatballs, house made pastas and pizzas. the food philosophy is sourcing local purveyors and keeping a fresh and italian mindset when it comes to utilizing each product to its full potential without masking its truest flavor. the menu changes with the seasons, and depending on what ingredients are available. we were recently invited to sample the latest east meets west additions to the menu, all of which were amazing.

i attended the iron chef challenge in which chef pascarella was given challenging ingredients from craft butchery and the fairfield cheese company with little time to prepare and turned them into six courses of masterpieces. each dish was presented artfully. each tasted delectable. i was blown away by his creativity. i particularly enjoyed the moullard duck "three ways" and pan roasted gorgonzola gnocchi. i am definitely heading back to barsugoand am eager to try their bolognese pasta which i hear is incredible.

barsugowill serve numerous pizza combinations, from a simple burrata or a margherita to the wonderful flavor combinations of the 2012 ctbites winning braised short rib topped with several roasted eggs. but the pizza is just the beginning of the cuisine. chef pat has been busy testing numerous varieties of meatballs, including one stuffed with foie gras as well as a tribute to his culinary mentor, his mom, with the inclusion of "mommy's meatballs." and for those indecisive meatball aficionados, chef pat will make your decision easy by offering a meatball sampler.
