palmer & co emulates speakeasy theme - which has seemingly captured sydney’s imagination for five years - beautifully. tucked away on abercrombie street in the heart of the cbd, you descend down the stairs to enter a delightful basement bar. as you approach, you can hear laughter, arrogant conversation interwoven with the sweet accompaniment of jazz. beautiful waitresses greet you in flapper dresses as they swan gracefully around the tables.
the bar itself was another revelation. everything was supremely polished. the way the garnishes were set up, the glassware, the spirits -- everything was absolutely immaculate. the backbar was beautifully lit and the spirits proudly displayed on lovely timber cabinets ...
the cocktail menu is short, featuring their signature list, long lost forgotten drinks and prohibitionist cocktails. what impressed me was the variety on offer. palmer & co doesn’t purport to be a “speciality” small bar, such as the barber shop or baxters. the prices were all at the $19 mark, which is reasonable considering the standard of the venue.
