today is a celebration of friendship! the first lady i met in our village when we moved to alabang in 2010 just sold her house and said goodbye to her plans of retiring here. she and her husband are going back to the us.
for a fitting "fare well and see you there next year," we went to neil's kitchen. it's amazing that neil ramos does not have a formal culinary background. one thing sure, he knows flavor, how to mix, match and have it come alive in living color with familiarity and novelty. he started out as a caterer but his love for food, cooking, innovating and clamor from people who trusted his abilities led him to open his kitchen to the public at westgate, alabang.
the great thing about neil's kitchen (aside from the food) is the waitstaff. they make you feel you're important as they unobtrusively guide you thru the menu while making knowledgeable suggestions. today is no different as we had aaron handle our table.
there is a separate menu for zomato gold and we chose the crowd favorites; sinigang paella with grilled pork belly (p395) and bagoong paella with kare-kare (p395 and free with gold). from the regular menu, we got "triple t" tortang talong tower (p350) and my absolute favorite, fried suman, mangga and chocnut (p250), for dessert.
i super love the sinigang paella because all the sour notes you'll associate with sinigang is in the rice. combine this with the smoky, crispy and charred bite-sized pieces of grilled liempo and the crunch of crispy kangkong and it's party-party!
the kare-kare is rich with its peanut sauce enveloping morsels of tender beef and bits of tendon. so succulent it is, that when you mix in the bagoong flavored rice it's game over. no sauce or other seasoning needed.
the triple t is some sort of homage to omurice. instead of egg omelette wrapping rice, it's tortang talong encasing rice with beef, pork and shrimp. there's crabstick mayo on top to introduce another texture and taste dimension. if you want to be more traditional, there's a brushstroke of tomato ketchup to bring back childhood flavors.
the fried suman is a work of art. there is a cube of mango gelatin on top, that if you close your eyes,would taste and somehow feel like real mango that comes in a chunk of a block. drizzled with coconut cream, crushed chocnut and peanuts, it is the crowning glory to the tasty, sticky suman. i live for food like these. bravo!
