thisplacewas good overall; i came here twice in 2016. the tapas was between good and excellent; i loved the manchego cheese fritters; cheesycand rich however not oily, the leek added some sort of extra flavouring and freshess to it. we also ordered the deliciously flavoured and tender lamb ribs, however for me the star was the paella with seafood. it had a great flavour of seafood and fish mixed with saffron (usual for a paella) however i find for the portion sizes the price was quite a lot ($38). i would, however, go back here again; quality ingredients and nice ambiance; staff could work on their people skills and be warmer though.

great environment and service. i came to bomba for my anniversary dinner last night and loved everything about it... we had a drink in the bar upstairs first and the atmosphere for a sunday night was fantastic. the bar staff were very friendly and helpful!
the dinner we had downstairs was fabulous... i do love the sharing style of dining at the moment and the portion sizes and quality of all the food was exceptional. i will definitely be coming back and recommending thisplaceto all of my friends.

the tapas style, spanish inspired food here is great. not to mention the hefty and creative drinks menu and the cocktail menu, which is something to make a trip for alone. i've never been upstairs but the ambience downstairs is quite lovely and pretty cosy. recommended for a date venue.
we were a large group and ordered the set menu, which offered a fantastic variety. the first out were the fresh oysters. for the non-oyster fans, the chopped broccoli, almond and goats curd toast with housemade morcilla (blood sausage), was the replacement. i don't mind fresh oysters but someone heard me wrong, and i ended up being glad to get a piece of the toast instead. it may have been my favourite dish of the night! the flavours just came together so spectacularly, while the bread was toasted to perfection, crispy on the outside with a degree of fluffiness on the inside. the greens, nuts, and subtle but tasty goats cheese culminated beautifully, and i don't recall tasting anything like a blood sausage on there, but i think it contributed a slight savoury touch. this was followed by the charcuterie, (which i believe was jamon) and also the leek and machego cheese croquettes. the jamon was excellent, you could taste the quality in the texture of the meat. it had substance despite being so thinly sliced. the croquettes were very nice, the filling had spark and was tasty. the wild mushroom and oloroso soup with crispy jamon came in a very small serve, not much bigger than a shot. it was a nice intermission for the palate, being smooth and creamy, with great flavour. i would have preferred it just like this, as the crunch of the jamon was a bit out ofplacein the midst of the smoothness. next we're the marinated lamb ribs with sumac yoghurt. these were succulent and flavourful, the yoghurt adding a pleasant and subtle tangy note. last of the starters was the charcoal grilled corn with dried maize. i found this to be quite delightful, as the corn was pretty nicely charred, but had a host of other flavours, with the crunchy and slightly salty maize, and the tasty mayo like sauce, which had been infused with something good.
i enjoyed only one of the mains, and this could be because i was getting full already, but i still maintain that the pedro ximenez braised pork jowl was too dry for me. on the outside it was bathing in this delectable looking sauce which gave the impression of succulent meat. perhaps this increased the shock at the dryness. the cauliflower was puréed and easily lost in the thick sauce. the other main was the star--being charcoal grilled moreton bay bugs with spicy harissa and jamon migas. the flesh and taste was great, although i wasn't getting much charred bbq flavour from it. the harissa and migas added a bit more character to the taste too. salad was served with these two mains-- it was pickled red cabbage with golden raisins. pretty good combo with the pork.
dessert was quite a pleasant affair but not mind-blowing. the chocolate croquettes were a bit of a disappointment for me. hazelnuts were heaped on too copiously, and combined with the crispy coating of the croquette, left the palate too dry, for there was not much of a melt-in-your-mouth chocolate filling to soak it in. the custard lacked any character really, but did help somewhat with the dryness. the churros with chocolate was simple but pretty good. churros were fluffy inside, crispy outside and the chocolate made for good dipping. the highlight was definitely the turron parfait. the texture was nice and creamy, balanced by the crumbly bits and the nougat. the strawberries and the delicious filling of palo cortado (rare kind of sherry) poached cherries added fruity excitement. quite a delight for sweet-tooths.
and those cocktails? very good! the amaretto sour was yum--i'm not usually a fan but this one was nice and smooth and the almond liquor wasn't overpowering so you could taste all the goodness underneath. my 'pirate's special' was pretty nice too. lots of strong flavours in there, but these were balanced nicely with some fruitiness from the lime and raspberry.
bomba is a great venue for many reasons and it's obviously quite versatile--there's so many things going for it.

love my tapas and been eyeing thisplaceoff for ages. had a seat at the bar and started with an oyster 1/5 and the crispy fried prawns 3/5 followed by the brocolli and goats cheese on toast 3/5 and the bone marrow on toast 4.5/5 (this was the dish, or morsel of the night!), leek and cheese croquettes 4/5 and grilled octopus 2/5. we definitely ordered our mains badly and got the bay bugs which were 3 small mouthfuls in total. the spicy sauce was non existent and the bay bug meat seemed very dry (i'm not too familiar with them so perhaps they're always dry?). overall it was an ok meal but we regularly eat at movida and perhaps our expectations of spanish food are too high? would have the bone marrow on toast again in a second but not overly wowed.

i can’t believe how many times we walked past and have not dined here sooner! absolutely aplacewhich we’ll return for a good food, drink, vibe, service and value for money.

lots of vegetarian options in the menu and we ordered almost everything, and there isn’t one we didn’t enjoy. i learnt/tasted so many new veges that night too (from bomba and our vego frens).

with 10 types of tapas/ sides (excl drinks), the bill works out to be under $40 per person. totally scored!

now for foodies out there, dishes you would not want to miss.

we’ve been here a few time for dinner and couldn’t fault it but we booked aplacehere for 9 people on 12th oct at 8.30pm. from the start the first waitress that served us was rude, arrogant, and talking over everyone when taking orders. it’s like she was not interested. we’re a group of easy going people but this waitress made every comments without thinking. we said it to her after a few offending comments and they changed to another waitress who was so friendly and helpful. bomba i suggested you invest in training your staff with manners and etiquette. deduct 2 stars for the service from the first waitress other than that it was good.

friendly staff, theplaceis overly loud.
they offer tasting of your choice of wine before you order to see if you like it.
i tried their take on negroni which was slightly sweet but tasted equally strong. they also serve the original negroni too.
their small crispy prawns/shrimps went really well with the drinks (especially if you're a beer lover).

we loved 😍
thisplacehas got to be one of my favourite spanish tapas places in melbourne. the pork neck and cauliflower purée was amazing! it made for a good dip for bread also. the scallops and prawns were also very flavourful! i’m not usually a fan on corn but the charred corn paired with the chipotle-like sauce really made it a stand out. the crime brûlée is an excellent choice for dessert!

we disliked 😖
i was really excited to try the paella but it was a let down unfortunately. the seafood didn’t taste as fresh as the other seafood dishes and the flavours just weren’t there. there are better paella places in melbourne.

nice chill vibes and very friendly staff. my friend and i decided to order lots of small plates to share. they were all delicious, but some of my favourites were the school prawns, the morcilla montaditos, the lamb ribs with yoghurt and the patatas bravas. we also had the chocolate orange ice cream and the bomba mess for dessert (ended on really high note!) always been a fan of spanish food and thisplacetotally vindicates that!

went here last night for some nibbles before going to ngv, shared the seafood paella, the calamari and mussels were flavourful and the paella was super hot and delicious.
for tapas we had the scallops which were crunchy - a little bit salty but i would recommend it.
the lamb ribs were probably the best with sumac yogurt,
we also had the bone marrow on toast with wagyu cecina and croquette which was okay, we shared one between two. 
theplacewas pretty busy on a saturday night and we managed to get a one hour seating from 6:30-7:30 without booking, great vibes and would love to visit the rooftop another day!

my partner and i had dinner here and the service was excellent. the staff were really personable and friendly.

i couldn’t decide what to eat so we agreed to get a feed me 3 course menu. we got 9 dishes over 3 courses and we really enjoyed the lot.

my partner didn’t want seafood so the waiter said “no problem” and that was catered for. it was all very seamsless and easy.

if you go here you must try their complimentary home made sourdough bread which was soo good i asked for seconds lol

croquettes, lamb ribs, sliced zucchini on rye bread, corn, a prawn for me, a yummy salad, pork jowls, spatchcock and the most amazingly delicious dessert! yummmmo

the cocktails were amazing too! thisplaceis a must visit if your in the city and reasonably priced for what you get.

tried thisplacedue to high ratings but were quite disappointed. food is quite average compared to their sister’s restaurant anada. but their service is very attentive.

i love love love this place, been here twice already and always enjoyed the food and ambience. they make amazing paella and also the grilled corn cob ahh! the bomb! the staff and are really friendly and knowledgeable with food and drinks pairing. i give thisplacea two thumbs up 👍🏻👍🏻

finally got to try the famous bomba! with 4.5 stars on zomato definitely a must go and my expectations were sky high. i would really like to give thisplace3.7 stars rather then 4 but had to round it up i guess.

first impression: cozy atmosphere for a casual dining experience. doesn’t have much spanish flare which i thought was a little disappointing because what’s better than a dining experience to escape your daily norm? what i thought was very unusual too was that they only had about 8 different tapas and all of them are bite sized which totally isn’t what tapas is like at all.

food: we ordered a bit of everything so apologies that i wasn’t able to take photos of every dish. the dishes we tried were delicious and nothing we ordered lacked in flavor. a little too much cheese on the asparagus for my liking but lovely in general. all in all nothing outstanding to my surprise so i feel like i have to go back for paella as that was one of the only dishes we haven’t tried.

to summarize it i think i’ll stick to las tapas on chapel street as it’s a safe bet and authentic too but i’m glad i ticked bomba off the list.
