beecher's handmade cheese

even though i had been to pike place market four times in two and a half days, i hadn't managed to hit beecher's handmade cheese. okay, i may have ducked in for a second to grab a sample or two, but i left empty-handed once i had consumed said samples. i wanted to get some of their curds for my mother as a thank you for driving us to and from the airport, and to rectify the fact that i hadn't tried any of their hot food yet. and wouldn't you know it, there's a beecher's cafe and mini-store in seatac international. i got some cheese for mom, and a little of their world's best mac and cheese for myself.

best food in seatac. hands down, this is the best food you can get in seatac airport.

beecher's on pike street is one of those iconic places. you can't miss it with it's cheese spinning apparatus and a long queue of hungry tourists. the wait is well worth.
i had the self applauding "world's best mac & cheese". it's difficult to call your self world's best and then live up to the expectations. thankfully in this case it was quite good. don't know if it's world's best but it's pretty damn good.

so gooey so good. i had the fresh cheese curds! they was great! my girls had the mac n cheese and they kicked the bowl my husband called it the best mac ever! he had the dungunus crab grilled cheese sandwich and said it was brilliant!

there are 4 or 5 grilled cheeses on the menu at the beecher's in the airport. this is the most basic, the "grilled cheese". it has a mix of flagship and just jack. it's terrific. the beecher's location in the airport is one of the best places to get real food while at seatac.

same great cheese as pike's place market. beecher’s at the airport has the same great cheese as beecher’s in pike place market. the airport menu is smaller because it’s a much smaller store. the seatac location doesn’t have gluten free mac and cheese. but they do have other gluten free options, such as snack packs.

there is a small coffee bar (that beecher’s owns) that’s in the same space. it’s a big step up, in terms of flavor, from starbucks. the coffee is not awesome like caffe appassionato (seattle chain) or coeur (spokane single location). however, beecher’s coffee is good. their coffee prices are similar to starbucks.

you eat in the airport chairs. beecher’s doesn’t have its own dining facilities. food is served in disposable ware.

the staff is nice. however, there is so much foot traffic through their food counter; they don’t have much time to socialize with you.

my family ate at beecher’s on the flight over to kauai and the flight back. we enjoyed: cheesy tomato soup, herbed cheese curds, mac and cheese and paninis. beecher’s may be the best airport food we’ll ever eat

i may very well be mistaken but i believe it was a mother daughter team working behind the counter and the mother daughter team, especially the mother provided the most welcoming and warming service i've received at an airport eatery. it led me to wonder if she were the owner. beecher's is small with no seating area.  order, wait, and find a seat outside.  they do sell high quality ingredients as well as use them in their preparations.  i also noticed virgil's root beer and reed's extra ginger brew in the soda section.

wonderful place. really like my grilled cheese and mac-n-cheese.
i thought it was great to see the cheese being made as well.

the "world's best" mac & cheese was pretty darn good but not the world's best. lots of cheese with a hint of spice.

yummy homemade cheese sandwich -worth the wait. not a fan of the mac and cheese- was soupy.
