tschudin chocolates are the most excellent handcrafted local artisan chocolates that i have had. the owner/creator is gifted. he is consistent and is as devoted to his craft as to his philanthropy. it has been wonderful pleasure each time that i have had them.

chocolate!!!. tschudin chocolates by far is positively the best chocolate that i've ever had. i have been in the restaurant business for over 20 years and i'm amazed at not only the quality of taste and flavor, but the artistic expression of the final product. i am so very impressed with tschudin chocolates and would highly recommend them to anyone! bravo!

debra a.. tschudin chocolates has been an absolute delight every visit. never have i tasted such unique, flavorful delicacies in the chocolate genre. mr. lucheme is a truly talented, creative chocolatier and sculptor. the chocolates simply melt in your mouth. there is something for everyones palate. i recommend you take a walk through, meet the delightful staff and experience the pleasure.

chocolate-making class. if you appreciate fine chocolates, as well as cooking, the chocolate making class is for you. i saw a groupon for the introductory chocolate-making class, and i decided to make a present to my wife. we like cooking, and my wife has decent baking skills. so, we thought we would try it.

rob (owner of the place, very attentive and charismatic) warned us that the class would last 4-5 hours, depending on how well the process will go. there were 4 people in our class (including us).

champagne and orange juice were served at the beginning of the class. it started with the video, explaining history of chocolate, as well as chocolate making process, including tempering and crystallization. the video lasted about 30-40 minutes, and the second video did not start, so we proceeded to the "hands-on" part, the making of the chocolate truffles.

the class was well-organized. most ingredients were prepared before we started, and kitchen space was well-utilized by our group. each person had a chance to participate directly in every step of the process, from tempering and making the ganache to coating to rolling in the chocolate "powder". we also compared various types of commercial chocolate that can be used in the candy making, and found all of them delicious.

there were no delays or interruptions in the class, except two times when customers came in to get some chocolates. while the chocolate ganache was cooling and the chocolate for coating was mixing, we watched a second video, much shorter than a first one.

at the end of the class the group got some of the truffles made in the class, as well as some of the pre-made candy from display. i asked rob for a few recipes, and he was happy to provide them.

all-in-all it was a very educational and pleasant experience for us. while we do not have granite counter at home, we do have a fairly large marble board. so, i think we will try one of the recipes we got.

sweet chocolate making class. i recently was a part of a chocolate making class. the owner, rob, was absolutely wonderful--very knowledgeable and clearly loves what he does. the class was fun, informative, open, and very interactive. we were encouraged to ask questions and to try the chocolate at each step in the process of making fresh cream truffles. when i brought the chocolate we made home for family and friends, they raved about it. it was a lovely experience that i hope to repeat.

the space is tiny, but what's really amazing is the chocolate. very high quality and delicious confections come out of that two-man kitchen. if you get a minute, sit down with a cup of the hot chocolate. it is wonderful.

thumbs up. when my friend and i walked into tschudin chocolates and confections, we were immediately greeted with glasses of fresh-squeezed orange juice, served to us by none other than the chocolate mastermind himself, rob tschudin, as well as his cohort lara. as seniors with little to no idea what we’re going to do post-wes, we felt impelled to ask lara, who looked to be just a little older than us, what led her to a career in the chocolate business. turns out she has a bfa from nyu, but was “corrupted,” as rob affectionately put it, and went back to school for french culinary training. after seeing and tasting the colorful array of chocolates, pastries, and frozen treats available at tschudin, and observing the joyful, warm atmosphere that rob creates for his employees, going back to school to learn how to make desserts doesn’t seem like such a crazy idea after all.

while rob got ingredients ready in the back, lara chatted with us over a bowl of blueberry scone dough. scones are her favorite thing to make, she said, because even though it’s important to meticulously measure out all the ingredients on a scale to get the consistency just right, she can have a good amount of creative leeway with the recipe.

this time, she added lemon zest and brandy to the mix before molding the crumbly dough into squares. the scones were then brushed in butter and sprinkled with sugar before being put in the oven.

while we waited for them to bake, lara explained to us what she likes most about working at tschudin. “here,” she says, “i’m not just a cog in the machine;” the cozy and personal vibe at tschudin, as well as the small number of employees (four, on a busy day), allows for a level of intimacy that you wouldn’t get with a larger company. it’s clear that lara’s contributions are important to the success of the shop. in fact, rob describes many of the treats he shows us, such as some frozen mounds of chocolate mousse with a gooey pistachio filling (pictured below), as “lara’s creations.”

rob’s shop serves not only as a chocolaterie and pastry destination, but also as a hub for many of the culinary bigwigs of middletown. during our stay, we were delighted to see brian o’rourke of o’rourke’s diner walk through the door. he warmly greeted rob and lara before picking out a few treats from the display case to take home with him. there was seldom a moment during our time in the store when customers weren’t trickling in and out the doors. one person walked in and requested every macaron they had. this, lara explained to us, is typical. their menu changes from hour to hour depending on what is popular and what rob and lara decide to whip up, so if someone sees a treat they love, they jump at the opportunity.

during these hot summer months, the store’s specialty is frozen mousse, which the chocolatiers form into “moussicles.” the finished product looks like a frozen bar of chocolate ice cream, but in reality, it’s much more. tschudin’s moussicles are filled with gourmet chocolate-mango mousse and coated in dark chocolate. then they are topped with a flourish of milk chocolate. the finished product is rich and decadent, but also perfectly refreshing. another bonus? moussicles don’t melt nearly as fast as ice cream and popsicles do.

for those who have heard of dominique ansel’s cronut, which is currently sweeping the nation, you’ll be happy to hear that the trend has found its way to middletown in the form of tschudin’s “laminonuts.” they get their name from the “laminated” (flaky, layered) croissant dough they’re made with, combined with the deep-fried deliciousness of a doughnut. you can order yours rolled in sugar, infused with pastry cream, or slathered in caramel sauce. i had mine with pastry cream and caramel sauce. while some doughnuts are overwhelmingly rich, tschudin’s croissant dough is light and buttery, lending towards a less heavy but much more delicious version of the classic dessert.

our stay lasted just long enough for us to see the scones come out of the oven. although we didn’t try them, the sight alone was enough to make our mouths water. the tops looked perfectly crisp, and the dough appeared to be buttery and soft, with blueberries generously sprinkled throughout. when i asked if there were any new recipes on the horizon for tschudin, lara confirmed that there are, but that they are top secret. there’s no doubt that i’ll be coming back to find out.

delicious. hello, i'm madeline. i am 12 years old. i met rob through a family friend, debra. when i first tasted rob's or mr.tschudin's chocolates, they were the best i have ever had. i mean coming from a twelve year old. i was fascinated by his hand-crafted sculptures and home made chocolates. his desserts are amazing! i experienced the real deal when i first went to his chocolate shop. (and by the way, i love the cherries on the sign out front.) i had a full tour from one of his employees. i immediately put on my apron and hat and i joined in the fun.

three years of tschudin. i moved to middletown three years ago, not knowing much about the city. about a month into my residence, i happened to walk into tschudin chocolates to find a smiling rob lucharme behind the counter. "hey, how's it going?" he asked. "not bad," i replied, "but i've never been in here before and was wondering if you could show me what you've got?" now, what i meant was a run-down of the multitude of scrumptious specimens that tschudin chocolates always keeps in stock, but rob looked around and replied "sure! give me a second to wash my hands and the tour will start in the back." taken completely off guard, i was treated to a 30-minute tour of the entire chocolate operation, from the multi-national ingredients to the molds, the machines to the displays, the sculptures to the history. rarely does one see such personal attention given to customers, but i've come to understand that rob simply operates that way, and trains his staff in the same manner. you don't just walk into a store when you visit, you walk into the lucharme home, and whatever this family of chocolatiers can do to make your visit more pleasant, they'll gladly oblige. so, for three years of wonderful people, ever-changing and varied inventory, and a base for every downtown middletown tour i've ever given, thank you tschudin chocolates!

willy wonka. perhaps one of my favorite chocolates is the garam masala, with it's wonderful flavors and aromas.

the peanut butter cups are smooth and delicious.
