used to be more impressive. proof used to me one of my favorite restaurants in louisville, for several reasons it's gone downhill. i like that they are using local foods in fancy applications, but the time it took you to shape that meat into a cube could have been used to add spices. fancy french and italian on paper sounds good, doesn't mean much if it isn't impressive. recently went on a monday, and it took far too long to get everything and anything, understaffed?? portions keep getting smaller, i swear. maybe i'm getting fatter? if you are a 4 top, you should receive an appropriate amount of portions with an appetizer, don't give me three pieces of toast, that just doesn't make sense. does anyone in the kitchen know how to read a ticket?
all in all, proof has become more about the presentation, from the outside, inside, appetizer to dessert. presentation is elegant, but not everything. sorry proof you have been downgraded in my opinion.
